We ALWAYS have this premade and around the house! Very good and even better when you add some Bailey's or Kahlua!

Canning Recipes

Schnake Apple Butter

15 or so medium sized tart apples ( I use cortlands or macs)
4 cups of apple juice or cider
2 tsp ground cinnamon
3/4 tsp ground allspice
1/4 tsp ground cloves
2 cups brown sugar

Wash, core, peel & quarter apples. Place apples in a large pot with juice. Bring to a boil then cover the mixture and let simmer for 30 minutes, be sure to stir occasionally. Mash apples in juice and then measure out 10 cups. Add remaining ingredients to the 10 cups. Bring to a boil and reduce heat again. leave uncovered and over ver low heat for 1.5 hours until mixture is very thick. Stir frequently.

Spoon apple butter into hot sterilized canning jars. Leave 1/4 inch head space. Wipe rims and adjust lids. Place in boiling water canner for 5 miutes (half pints) or 10 minutes (pints). The result is 4 pints.

Apple Jelly

Save your cores and peels from making apple butter, apple sauce, and apple pie in a jar to make this yummy jelly! And to spice it up a little--I add a few tsp of cinnamon with the sugar.

Apple Pie in a Jar
This is ingenious! So easy to make--and then if you ever need to put together a quick dessert, plop this bad boy in a pie crust, bake, and you are set!

28 cups peeled apples, sliced
1/4 tsp nutmeg
4 1/2 cups sugar
1 tsp salt
1 cup corn starch
10 cups water
2 tsp cinnamon
3 TBSP lemon juice

Pack apples tightly in quart jars. Make syrup using the remaining ingredients except lemon juice. Cook and stir until thick and bubbly. Add lemon juice. Add syrup to the jars using a spatula to get out all air bubbles. Seal and process jars in water bath for 20 minutes. Makes 7 quarts of filling.  I have had problems with this one overflowing when canning--I recently tried the one below and it was much more successful!

Spiced Cherry Jam

This is the basis of our Spiced Cherry Jam. We used this recipe and made some slight variations, for example we added some add'l spices and nixed the dye. This is TOO good!

My Mother's Easy Apple Crisp

Heat oven to 375 degrees.

In a 9 x 13 pan place
6 cups peeled & sliced apples (I just cut apples until I fill the pan)
sprinkle the top with 2 TBSP lemon juice

In a separate bowl, mix
1 1/2 cup brown sugar
1 cup flour
1 cup oats
2 tsp cinnamon

Cut 1 cup margerine or butter into flour mixture.

Sprinkle topping on your apples.

Cook in the oven for 45 minutes! Serve with ice cream & caramel sauce!

Peg’s Old Fashioned Bread Pudding
( I honestly haven't tried this one either--but it's my Grandma's recipe so it has GOT to be good!)

1 tall can evaporated milk
1-2/3 cups water
2 eggs, slightly beaten
½ cup sugar
½ tsp. salt
½ tsp. nutmeg
1 tsp. Vanilla
3 slices bread, buttered and cut into 1” square cubes with crust removed
½ cup raisins

Scald milk and water together. Mix eggs, sugar, salt, nutmeg and vanilla. Add hot milk mixture. Place half of bread in bottom of buttered casserole. Add half the raisins. Add remaining bread, raisins and egg mixture. Press cubes lightly into the liquid. Place dish in pan of hot water. Bake in 375 degree oven until custard sets and an inserted knife comes out clean – approximately 45 minutes. To serve, cut in squares and serve with Dip Rosie Sauce (follows)

Dip Rosie Sauce

Mix 1-1/2 Tbsp. cornstarch and ½ cup sugar. Slowly add, while stirring, 1 cup boiling water. Add 1 Tbsp. butter and 1 (or more) tsp. lemon juice, lemon flavoring (or any other flavoring.) Cook over low heat until thick and transparent. If serving bread pudding warm, use warm sauce. If serving bread pudding cooled, serve with cooled sauce. (Grandma prefers it cooled.)

Cakes

Hot Fudge Sundae Cake

I honestly haven't tried this one yet--another Grandma Irvin recipe.


1 cup flour
¾ cup sugar
2 Tbsp. cocoa
2 tsp. baking powder
¼ tsp. salt


In ungreased 9” x 9” baking pan, stir together first 5 ingredients.


½ cup milk
1 Tbsp. oil
1 tsp. vanilla


Stir in milk, oil and vanilla 1 cup chopped nuts Stir in nuts and spread evenly in pan. Sprinkle with:

1 cup packed brown sugar
¼ cup cocoa


Pour 1-3/4 cup very hot tap water over batter. Bake at 350 degrees for 40 minutes. Spoon sauce from pan over servings or top with ice cream and spoon sauce over top. Good served warm or cold. Very rich and good!


Mini Black-Bottom Cupcakes



These are from Aunt Sally. These are a pain to make, but they are so good and people ask for them every year.


Heat oven to 350 degrees. In medium bowl, combine

16 oz. cream cheese,
2 beaten eggs,
¼ tsp. salt.

Beat well and mix in 12 oz. semi-sweet chocolate chips. Set aside. In large bowl, sift together
3 cups flour,
½ cup unsweetened cocoa,
2 cups sugar,
2 tsp. baking soda,
1 tsp. salt.


Then add to this mixture

2 cups water,
2/3 cup of oil,
2 Tbsp. white vinegar,
2 tsp. vanilla.


Mix well. Using miniature muffin tins and paper liners, fill ½ full of chocolate mixture (about 1 Tbsp.) – then drop 1 tsp. of cream cheese mixture in center. Bake 20 – 23 minutes. Makes 100 -110 mini cupcakes.

Casseroles

Beef, Rice, & Cheese Casserole

This recipe is simple to make, the kids like it, and it freeezes GREAT!  I double the recipe and use 1/2 ground turkey and 1/2 ground beef.  We then eat half for dinner and freeze the rest!

Cheese Sausage Spinach Pie

1 lb italian sausage (bulk)
5 eggs
20 ozs spinach (2 packages frozen chopped, thawed and squeezed dry)
4 cups (16oz) shredded mozzarella cheese
2/3 cup ricotta cheese
1/2 tsp salt
1/8 tsp garlic powder
1/8 tsp pepper
1 pastry (10 inch, double crust pie)
1 tbsp water

In a skillet, cook sausage over medium heat until no longer pink; drain. Separate one egg and set the yolk aside. In a mixing bowl, beat the egg white and remaining eggs. Add spinach, mozzarella cheese, ricotta cheese, salt, garlic powder, pepper and sausage; mix well.


2 Line a 10-in. pie plate with bottom pastry. Add filling. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry.

3 Bake at 375 degrees F for 50-60 minutes or until crust is golden brown and filling is bubbly. Let stand for 10 minutes before cutting.

Creamy Zucchini Casserole

Rob really liked this as a freezer casserole. I used plain yogurt instead of sour cream for a healthier yet tasty alternative.

Ground Beef Hash

Simple and yummy!

1 pound ground beef
1 pound sausage
4 carrots sliced
1 large onion diced
4 potatoes cubed
2 (10 oz) can of cream of mushroom soup
4 cloves garlic minced
salt & pepper to taste

Brown meats together.  Combine all ingredients.  Put in 9x13.  (This is a pretty big recipe--I usually do 1 9x13 and then freeze an 8x8 for a future meal.  Cover with foil.  Cook 1 hour at 350. 
Mexicali Hamburger Casserole

This is a yummy one.  Very quick & good.  I don't make the tomato toss--but perhaps in the summer I will with fresh ones from the garden. Mmmmm...

Pumpkin Black Bean Bake

This is great for the fall!

1 lb ground beef
2 cups cubed pumpkin pieces
1 coarsely chopped medium onion
1 15 oz can black beans--rinsed
1 cup corn
1/2 tsp salt
1/2 cup beef broth
3 oz cream cheese
1 8.5 oz package of corn bread mix
1 egg lightly beaten
1/3 cup milk
1/3 cup pureed pumpkin

Preheat oven to 400 F. Cook ground beef, pumpkin, and onion over medium heat until browned. Drain juices. Stir in black beans, corn and salt. Heat through. Stir in broth and cream cheese until blended. Transfer into 9 x 13 baking dish. In medium bowl stir corn bread mix, egg, milk, and pureed pumpkin until just combined. Spoon over beef mixture. Bake 20 minutes or until toothpick comes out clean.


Santa Fe Casserole

Great Casserole for the freezer. I nix the taco sauce and use extra salsa. I also add corn. I also nix the sour cream.

Chicken & Tortilla Soup

This is my mom’s recipe. It is a great soup base that I love to play with (no two batches are ever the same!) For a variation, you can also add cooked rice.

1 chopped large onion
6 minced cloves of garlic
1 chicken breast chopped
4 tsp cumin
½ tsp of cayenne pepper
49 oz chicken broth
15 oz diced tomatoes
8 oz tomato sauce

grated cheddar cheese
diced green onions
sour cream
tortilla chips

Saute onion & garlic in olive oil. Add chicken. Cook until browned. Stir in cumin and pepper. Cook 1 minute. Add broth, tomatoes, and sauce. Bring to boil. Reduce heat and simmer 20 minutes.

Top with remaining ingredients & serve with chips!

Chunky Bean & Chicken Chili
This recipe is a little bland--but I LIKE IT! We had just gotten done with a lot of sick tummies and this recipe really hit the spot! It is a great cold weather dish. Be sure to make the chips and cheese to go with it.

Corn Chowder


This is by far the best corn chowder I have ever made. LIke all recipes though, next time I will make a few adjustments. For example, less sugar--maybe just a tablespoon? I also used 2 cans of corn and 1 can creamed corn. You could also throw some additional veggies in. I think I would also try sausage or ham as the meat as well. Enjoy!



4 ounces bacon sliced into 1 inch pieces

2 tablespoons olive oil or butter

2 cups chopped onions

3 ribs celery chopped (1 cup)

2 TBSP flour

2 cups chicken stock

2 cups milk

2 large potatoes diced

4 cups of corn

2 TBSP sugar

1 cup half and half

salt and pepper to taste

1 red pepper chopped



In large stock pot cook bacon for 5 minutes over med-high heat.until almost crispy. Reduce heat to med-low and add butter/oil, onions, and celery. cook stirring occasionally for 10 minutes. Sprinkle with flour.and cook stirring for another 3 minutes. add stock, milk and potatoes. Bring to a simmer over med-high heat, then reduce heat to med-low and cook until potatoes are just tender 12 minutes. Lightly mash in the pot with potato masher. Stir in corn and sugar, half and half, and salt and pepper to taste. Bring back to a simmer over med heat and add red peppers. Garnish with cilantro.
Ann's Ham-Apple-Cheddar Quesadillas

I got this from my friend Ann. These are very yummy and so easy to make! A perfect side to a bowl of soup!

5 (10-inch) burrito-size flour tortillas (I use whole wheat tortillas)
1 tablespoon Dijon mustard
2 1/2 cups (10 ounces) shredded sharp Cheddar cheese
1 lb thinly sliced deli ham
2 Granny Smith apples, thinly sliced

Spread half of each tortilla with mustard. Sprinkle 1/2 cup cheese over mustard on each tortilla. Top with ham and apple slices. Fold tortillas in half over filling. Heat a lightly greased griddle or large nonstick skillet over medium-high heat just until hot. Cook quesadillas, in batches, 2 minutes on each side or until cheese melts and outside browns. Remove from heat, and cut into wedges. Serve with fig preserves for dipping, if you want to be all fancy about it.

Minestrone Soup


This is a nice quick and yummy Minestrone recipe
(Prep Time: 15 minutes. Cooking Time: 30 minutes)

1 Tablespoon olive oil

1 onion, diced

3 garlic cloves, minced

1 large carrot, diced

2 stalks celery, diced

2 (15 oz) cans Italian style petite diced tomatoes

1 (15 oz) can cannellini beans, drained

1 (15 oz) can kidney beans, drained

1 (32 oz) box chicken broth

1 small zucchini, diced

1 Tablespoon basil or oregano

1 ½ cups small dried pasta such as small shells

Parmesan cheese

1. In a large stock pot, sauté onion, garlic, carrots and celery in olive oil for a few minutes.

2. Add remaining ingredients, except for pasta. Bring to a low boil and then reduce heat. Allow soup to simmer for at least 30 minutes .

3. Prior to serving, cook pasta as directed

4. To serve, place a ¼ cup of cooked pasta in each bowl and top with soup. Sprinkle Parmesan cheese on top as desired.

Breads

Angela's Oven Apple Pancake

Yummy goodness!  You could probably use other things besides apples like pears, peaches, bananas,etc...

1 Cup flour
2 tsps. Sugar
dash salt
6 eggs
1 cup milk
3-4 large apples peeled, cored, sliced thin
cinnamon and sugar mixture
butter (to cook the apples)
Mix together flour, sugar, salt, eggs and milk. Set aside. Fry apples in butter in a large pan to desired tenderness. Transfer apples to a 9X13 pan sprayed with non-stick. Pour batter over the apples and place in 500 degree oven. Pancake will rise when nearly done, abt. 10-12 min. Reove from oven and sprinkle liberally with cinnamon sugar mix. Dot with butter and return to oven until browned, 3-5 minutes. Cut into squares.

Banana Pancakes

This recipe is the basis for pretty much all our pancakes. We may add peanut butter (melted in the microwave) or add chocolate chips/ berries or additional spices like nutmeg or allspice. Also--the more over-ripe the bananas, the yummier the pancakes!

1 1/4 C. flour
1 Tbsp. granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
1 1/4 C. milk
1 banana mashed
1 large egg, lightly beaten
1 tsp. vanilla extract

Combine dry ingredients in a large bowl. Stir in remaining ingredients. And VOILA! Do your pancake thing! Cook on a greased skillet (on medium heat) for about 2 minutes, and flip. Cook another 2 minutes. (When the top of your pancakes are bubbly--that is when you know to flip!)

Banana Oatmeal Scones
These scones are pretty yummy--and I like that they don't take sour cream or half n' half.

Cheddar & Chives Popovers

1 cup flour
1/2 tsp salt
1 cup milk
2 eggs
1 cup shredded cheese
2 tbsp chopped chives

Coat 8 cups of muffinpan with nonstick cooking spray. Fill remaining cups with 1/2" of water to ensure even cooking. Preheat oven to 450. Mix together flour and salt in one bowl. Mix together milk and eggs in another bowl. Combine flour and egg mixture. Fold in chives and cheese. Fill muffin pan. Cook for 15 minutes then reduce oven temperature to 350. Cook for an additional 15 minutes. Enjoy!

Duggar Homemade Rolls (Giant Crescent Rolls)

This recipe is FABULOUS!  So YUMMY!  Definite winner and so easy to make.  You may want to halve the recipe, or make them all and freeze half--makes 16 rolls.

1/2 cup shortening


1/2 cup sugar

1 teaspoon salt

2 packages yeast

5 cups flour, plus flour for kneading

2 eggs

2 cups hot water

1/2 cup (1 stick) butter, melted

1.Combine the shortening, sugar, salt, yeast, and 2 cups of the flour in a large bowl and cut with a pastry cutter.


2.Beat 2 eggs in a 2-cup measuring cup, then fill cup to the 2-cup mark with hot water; pour over the dry mixture. Slowly add the remaining 3 cups flour.

3.Cover bowl loosely with plastic wrap and let rise for 20 minutes in a warm oven. Then pour the dough onto a floured surface. Knead. Flatten with hands into a large pizza shape.

4.Cut with pizza cutter into 16 triangle-shaped slices. Roll up from the wide end to the point. Place the rolls in two greased 9x13-inch pans, bending into crescent shapes and leaving space for the rolls to double in size.

5.Let rise in a warm (but not hot!) oven at least 20 minutes. Remove from oven.

6.Preheat oven to 375°F. Bake the rolls for 20 to 30 minutes, depending on how brown you prefer. When done, immediately brush with the melted butter.

GingerBread Waffles

These are pretty tastey!  Next time I make it I think I will add a little less sugar or molasses next time, they are pretty sweet!


■1 cup unbleached, all purpose flour

■1 cup whole wheat flour
■3 t. baking powder

■2 t. ground ginger

■2 t. cinnamon

■1/2 t. nutmeg

■1/2 t. sea salt

■3 eggs

■1/4 cup brown sugar
■1 3/4 cups buttermilk
■1/2 cup melted butter

■1/2 cup unsulphured, blackstrap molasses

In a big bowl, mix together the flours, baking powder, ginger, cinnamon, nutmeg, and salt.

In a separate bowl, beat the eggs and sugar together, then mix in the buttermilk and molasses.

Combine the 2 bowls and pour around 1/2 cup of the mixture into your preheated waffle maker.

Cook according to your waffle maker’s directions.

Serve these with lots of real butter, real maple syrup, fresh fruit, yogurt, or even applesauce!





Healthy Low-Fat Banana Zuchini Bread


This is the best recipe I have found for Zuchinni bread. It takes out a lot of the sugar and fat and still tastes yummy! I nix the raisins and sprinkle some chocolate chips on top!

Honey Whole Wheat Bagels

Bagels!  Can you believe it?!  This is such a simple recipe, only 5 ingredients and yields 12 YUMMY bagels.  When I was making these the first time, my broiler didn't work, but the bagels still turned out really well!

Irish Brown Bread

Quick, healthy, and yummy!

1 1/2 cups white flour
1 1/2 cups whole wheat flour
1/2 cup wheat germ
1/2 cup quick oats
1 1/2 tsp baking soda
3/4 tsp salt
1 3/4 cup buttermilk (I use yogurt instead)
2 Tbsp honey

Heat oven to 425. Mix dry ingredients and wet ingredients separately. Then combine. Turn dough onto floured surface and shape into a circle about 2-3 inches high. Place on greased baking sheet and bake for 15 minutes. Reduce temp to 400 and bake 15 minutes more or until the bread sounds hollow when you tap it. Let cool 20 minutes.

Jantina's Banana Bread

This is my friend Jantina's Banana Bread Recipe--when she brings this--YUM! I don't think I have tasted banana bread better than this.

3 bananas mashed
1 egg
1/3 cup canola oil
1 tsp vanilla
1 1/2 cups flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped nuts (optional)

Combine bananas, egg, oil, vanilla, and sugar. In another bowl, combine flour, soda, and salt. Mix combinations together; add nuts if desired. Spoon into prepared muffin tin. Bake at 350 degrees F for 18-22 minutes. Makes 12 muffins.

JP's Big Daddy Biscuits

This is an AWESOME biscuit recipe.  You can hardly taste the shortening AND the biscuits come out PERFECT--so perfect you don't need a knife to split the biscuit in half!  Check it out!

Miracle Rolls

This recipe is from the Laura Ingalls Cookbook.  It makes 32 yummy dinner rolls.  You can make the dough now and refrigerate then bake later.  I divide the dough in 2 parts and make 16 one night and 16 a couple nights later.  I am also betting you could freeze the dough (though I haven't tried yet.)

2 cups boiling water
1 TBSP salt
1/3 cup granulated sugar, plus 1 tsp later
1/3 cup lard (I have also used shortening or butter)
2 packages of yeast
1/4 cup warm water
2 eggs
8 cups of flour

Combine boiling water, salt, 1/3 cup sugar, and lard.  Stir until dissovled then let cool to luke warm. 

Dissolve yeast in warm water with remaining 1 tsp sugar.  Let stand.

When sugar mixture has cooled, add eggs, yeast mixture, and 4 cups of flour.  Beat well.  Mix in remaining flour 1 cup at a time.  Refrigerate dough in plastic bag or tightly covered container.  You can keep this dough for several days before using it. 

When ready to use, preheat oven to 350 degrees.  Remove dough from fridge and divide in half.  Form each half into 16 rolls.  Place on greased cookie sheet.  Cover with towel and let rise until doubled in size (about 1 hour).  Bake for 15 minutes or until light brown.
Pizza Crust

This is a good recipe for pizza crust.  I double mine and do it in the breadmaker.  Then freeze half for making a pizza next time!

Raspberry Oatmeal Banana Bread

This one I did a lot of work on to perfect. Very yummy & healthy if you have raspberries in the summer!

3 cups all-purpose flour
1 cup of oatmeal
1 cup sugar
4 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
¾ tsp nutmeg
4 large ripe or overripe bananas, mashed
2/3 cup skim milk
2 large egg
2 tsp pure vanilla extract
3 cup fresh or frozen raspberries

Heat oven to 350°F. Coat two 8" loaf pan with cooking spray. In a bowl, combine flour, sugar, baking powder, baking soda, oatmeal, cinnamon, nutmeg, and salt. In a separate bowl, combine bananas, milk, egg, and vanilla; fold in raspberries. Fold together wet & dry ingredients until combined. Do not overmix. Pour batter into pans; bake 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan; cool completely.

Peanut Butter Pumpkin Bread

I was given this recipe from a friend. YUMMMY!

3 C. Sugar
1 (15oz pumpkin)
4 eggs
1C. Veg. Oil
3/4 C water
2/3 C. Peanut butter
3 1/2 C flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp ground nutmeg

Combine sugar, pumpkin, eggs, oil, water, and peanut butter; beat well. Combine flour, baking soda, salt, cinnamon, and nutmeg; mix well. Pour in 2 ungreased 9inx5x3 loaf pans. Bake 350 for 60-70 min or until tooth pick center comes out clean.

Pumpkin Bread

(From Aunt Sally)

This pumpkin bread is very easy and everyone in our family loves it. Sometime I put chocolate chips in it – or dried cranberries. It’s a must at Thanksgiving and Christmas! Lisa likes to spread butter on it – I prefer whipped cream cheese – or just plain is also very good!


3 cups all-purpose flour
2 cups sugar
2 tsp. baking soda
1 tsp. ground cloves
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. salt
½ tsp. double-acting baking powder
1 – 16 oz. can pumpkin (2 cups)
2/3 cup salad oil
3 eggs, slightly beaten


Preheat oven to 350 degrees. Grease well two 9” x 5” loaf pans. In large bowl with fork, mix flour with next 7 ingredients; add remaining ingredients and mix just until blended. Turn batter into pans. Bake about 1 hour or until toothpick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans and cool completely. Makes 2 loaves.

Pumpkin Buns

These came out of a Family Circle magazine.  This is a double batch--so you can make a batch and freeze the other batch for another morning!

Pumpkin Buns


1 envelope active dry yeast(about 2 1/2 tsp)

1/4 cup warm water

1 tsp plus 2 tablespoon granulated sugar

2 eggs

1/4 cup(1/2 stick) butter

1 can (15 oz) solid pack pumpkin

5 1/2 cup all-purpose flour

3/4 tsp salt

Filling:

1/2 cup(1 stick) unsalted butter, softened

1/4 cup granulated sugar

1 cup packed light brown sugar

1 tablespoon cinnamon

Frosting:

1 package cream cheese, softened
1/4 cup butter softened
1 1/2 cup confectioner's sugar
1/2 tsp vanilla extract
1/8 tsp salt
Sprinkle yeast over warm water in large bowl. Add 1 teaspoon of the granulated sugar; let stand until foamy, about 5 minutes. Beat in remaining 2 tablespoons sugar, the eggs, butter and pumpkin.

Gradually add 5 cups of the flour and the salt, scraping side of bowl, until soft dough forms. Turn out onto floured surface and knead remaining 1/2 cup flour into dough, adding more if sticky. Knead for 10 minutes, until smooth. Dough will be soft.

Grease a bowl; add dough. Cover with plastic wrap and place in a warm spot until doubled, about 1 1/4 hours.

Coat two 13x9x2 inch baking pans with nonstick cooking spray.

Make Filling:

Mix butter, granulated and brown sugars, and cinnamon in a bowl.

Punch down dough. Roll out half onto a lightly floured surface to form a 16x10 inch rectangle. Spread with half the filling. Starting on one long side, roll up jelly-roll fashion. Pinch seam to close. Repeat with second half of dough and filling.

Cut each log crosswise into 12 generous 1 inch pieces. Arrange 12 pieces, cut-side down, in each prepared pan. Cover with plastic wrap; let sit in a warm spot until buns double in size, about 30-45 minutes. (You can refrigerate one pan overnight or cover plastic with foil and freeze at this point.  Thaw in fridge overnight, then thaw on counter while preheating oven.)

Heat oven to 350. Uncover pans and bake buns until they are golden brown and bubbly, 28-33 minutes (thawed buns 36 minutes).

While baking beat together frosting ingredients.  Spread frosting on warm buns before serving.


Pumpkin Muffins

This recipe I got from a friend.  I use some substitutions to make it a bit healthier, but keep it yummy.  I use 3/4 cup of applesauce and 1/2 cup of oil instead of 1 1/4 cup oil.  Also--since applesauce is a good sweetener, I reduce the sugar to 1 1/4 cup.  Otherwise-YUMMY!  Enjoy!

Raisin Tea Ring

This recipe came from my Laura Ingalls Wilder phase.  This is one of her true recipes.  There isn't a lot of sugar in this--but there is LOTS of butter.  It makes a nice breakfast bread.

3cups flour
7 TBSP sugar
4 tsp baking powder
1 tsp salt
3/4 cup butter
1 cup raisins
1 egg
3/4 cup milk
1/2 cup chopped walnuts or pecans

Preaheat oven to 425.  Grease cookie sheet.  Mix flour, 6 TBSP of sugar, baking powder and salt together.  Use a pastry blender and cut in butter until mixture forms tiny balls.  Mix in raisins.  Mix egg and milk and stir into flour mixture.  If necessary, add additional milk to make dought soft.  Turn dough onto cookie sheet and shape into long roll about 1 1/2 inches thick.  Twist roll into a ring.  Sprinkle with remaining TBSP of sugar and press in nuts.  Let rest for 20 minutes.  Bake for 20 - 25 minutes until firm and browned.
Simple Scone Recipe

Okay..this recipe is SOOOO GOOOOD!  The dough tastes like cookie dough. The nice thing is--there isn't much sugar.  The bad thing--SO much butter!  I used yogurt b/c I didn't have sour cream and it was just as good.  (Oh..and of course I used chocolate chips instead of raisins! :) )

Soft Pretzels

LOVE LOVE LOVE this recipe!  Top with salt, cheese, cinnamon sugar, you pick!

4 teaspoons active dry yeast


1 teaspoon white sugar

1 1/4 cups warm water (110 degrees F/45 degrees C)

5 cups all-purpose flour

1/2 cup white sugar

1 1/2 teaspoons salt

1 tablespoon vegetable oil



2 TBSP baking soda

5 cups hot water

1/4 cup kosher salt, for topping

Directions

1.In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes.

2.In a large bowl, mix together flour, 1/2 cup sugar, and salt. Make a well in the center; add the oil and yeast mixture. Mix and form into a dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.

3.Preheat oven to 450 degrees F (230 degrees C). In a large bowl, dissolve baking soda in hot water.

4.When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Simmer 5 cups of water with 2 TBSP of baking soda in a medium sized skillet.  Place each pretzel into the baking soda solution for 30 seconds (flip if necessary and do another 30 seconds) and place on a greased baking sheet. Sprinkle with kosher salt.

5.Bake in preheated oven for 8 minutes, until browned.



Stardust Chocolate Pancakes

Rob made these after we were unable to get into a restaurant that is famous for Oreo pancakes (kids can't wait an hour to eat.) These were very yummy! Rob made them with freshly picked Bing cherries. SO GOOD! (Warning--not so healthy!!!!)

Twisted Berry Nut Bread

With our raspberry bushes and our jam making, I found this recipe.  It is a beautiful bread and great for breakfast or a snack.  YUM!

3/4 cup milk


1/3 cup sugar

3 tbs butter

1/2 tsp salt

1 packet active dry yeast

1/4 cup warm water (105-115 degrees)

3 eggs

4 1/4 cups flour, plus more for dusting

3/4 cup seedless raspberry jam

3/4 cup chopped walnuts, toasted

1 tbsp sugar

Heat milk, sugar, butter and salt in small pan until butter melts. Let cool 30 minutes. Sprinkle yeast over warm water in large bowl; stir to dissolve. Add milk mixture, 2 eggs and 1 1/4 cups flour. Beat 3 minutes on med-low until smooth. Stir in about 3 cups of flour.


Turn dough out onto floured surface. Knead until smooth and elastic, 3-5 minutes, adding flour as needed to prevent sticking. Place in large oiled bowl, turning dough to coat. Cover with plastic wrap and let rise in warm place until doubled, 1 hour. Punch down; place on floured surface. Cover; let rest 15 minutes.

Lightly coat 15 x 10 x 1 baking sheet.

Filling. Roll dough into 14: square. Brush with jam, leaving 1" border. Sprinkle with nuts. Roll dough jelly-roll style. Pinch seam. Transfer to prepared baking sheet. Cur roll in half; cross strips over to braid. Cover with wrap and let rise until doubled, 30 - 45 minutes.

Brush with egg wash; sprinkle with sugar. Bake at 350 for 30 minutes until brown and sounding hollow.


Whole Wheat Bread

This I got from a Laura Ingalls Wilder Cookbook.  It is a sweeter bread and OH so YUMMY!  Only make it, if you have cream cheese on hand to spread on top of it!

1/2 cup brown sugar
1/2 cup molasses
1 egg
3/4 tsp baking soda dissolved in 2 TBSP hot water
1 cup milk
1 1/2 cup whole wheat flour
1 1/2 cup all purpose flour
2 tsp baking powder
1 tsp salt
1 cup walnuts
1 cup raisins

Preheat oven to 350.  Grease 2 loaf pans.  Add molasses to brown sugar and let it seep in.  Add egg, dissolved baking soda, and milk.  Stir well.  Combine dry ingredients.  Beat dry ingredients in wet.  Stir in walnuts and raisins.  Divide between pans and bake for about 40 minutes.  (Don't forget to smother with cream cheese when eating!)


Whole Wheat Cinnamon Raisin Walnut Bread

This is a breadmaker recipe I got from my mother.  YUMMY!

For a 2 lb. loaf.

3 egg whites at room temperature + enough water to = 1 1/2 cups
1/4 cup oil
1/4 cup honey
2 tsp salt
1 1/4 tsp cinnamon
4 cups whole wheat flour
2/3 cup chopped walnuts
2 1/4 tsp yeat

2/3 cup raisin added after first rise.

Set to Whole Wheat Cycle

Napa Cabbage Salad

This is a yummy one if you have a head of cabbage. We altered this by omitting the butter and just toasting the noodles & nuts in the oven. We also reduced the oil to 1/2 cup and the sugar to 1/4 cup.

Cookies & Candies

Almond Fudge Truffles(Another Grandma Irvin recipe I haven't tried)

½ cup cocoa
1 cup sifted confectioner’s sugar
½ cup softened cream cheese
½ tsp. almond extract

Combine and mix until smooth in food processor, blender or use electric mixer.
Drop by rounded tsp. in 2 tsp. cocoa powder. Roll in balls until covered with cocoa powder. Refrigerate until firm – 1 to 2 hours. Put in foil candy cups. Makes 24 truffles.

Apple Cookies
I got this recipe from my friend Teri--a great fall cookie for after all that apple picking!

1 C. brown sugar
1 1/2 sticks of butter
1 egg
1/3 C. strong coffee
1 t. cinnamon
1 t. soda
2 C. flour
1 C. Dice apples
1 C. raisens

Frosting:
3 C. powdered sugar
1/4 C. butter
1 t. vanilla
1/4 C. strong coffee

Cookie: Mix and drop dough balls on cookie sheet. Bake for 350 degree for 10 minLet cookies cool then add frostingFrosting: mix together powdered sugar, butter, and vanialla, then add the coffee.

Candy Cane Cookies
Grandma Irvin made these every Christmas! A fun christmas sugar type cookie!

Mix thoroughly: 1 cup shortening (1/2 butter) 1 cup sifted confectioners sugar 1 egg 1-1/2 tsp. almond extract 1 tsp vanilla Sift together and stir in: 2-1/2 cups flour 1 tsp. salt Divide dough into halves. Blend into one half of the dough ½ tsp. red food coloring. Roll 1 tsp. of each color dough into a strip 4 inches long. Place strips side by side, press lightly together and twist like a rope. Place on ungreased cookie sheet – shape like a candy cane. Bake about 9 minutes until lightly browned. Remove while warm and sprinkle with ½ cup crushed peppermint candy and ½ cup sugar.




Candied Orange Peel
Another G'ma Irvin recipe. I have not tried this or the grapefruit peel--I guess these would be a good way of not wasting ANY of your fruit!
Quarter and remove peel from 6 oranges. Place in pan with 2 tsp. salt and cover with water. Boil for 30 minutes, drain, discard water. Repeat 2 – 3 times. Cut peel in narrow strips. Make syrup of 2 cups sugar and 1 cup water. Add orange peel and boil gently until syrup is practically all absorbed. Drain (if necessary) and roll in granulated sugar to thoroughly cover and coat. Spread on waxed paper to dry, turning over several times.
Candied Grapefruit Peel
Remove peel from 2 grapefruit in wide strips. Place in pan with 2 tsp. salt and cover with water. Boil for 15 minutes, discard water. Repeat 4 or 5 times. Cut peel in narrow strips. Make syrup of ½ cup light corn syrup, 1 cup sugar and 1 cup water. Boil peel gently until most of the syrup is absorbed – around 40 minutes. Drain, roll in granulated sugar and lay on waxed paper to dry, turning over several times - 48 hours.

Chai Spice Cookies

Chocolate Nut CookiesAnother Grandma Irvin recipe

Combine:2 c. brown sugar3/4 c. shortening (can be part margarine) Add:2 eggs and beat mixture Combine:4 c. flour½ tsp. salt1 tsp. soda½ tsp. baking powder¾ cup cocoa – (or 4 oz. melted chocolate) Add to first mixture alternately with:1 c. milk1 tsp. vanillaBeat well Add:1 c. chopped nuts Drop by tsp. on lightly greased cookie sheet. Bake at 350 degrees for 12 – 15 minutes.


Cowboy CookiesThis is a Grandma Irvin recipe. One I remember growing up with. A very Hearty cookie!

2 c. flour
1 tsp. soda
½ tsp. salt
½ tsp. baking powder
Combine and blend together dry ingredients

In large bowl blend:
1 c. shortening (I use butter/margerine)
1 c. granulated sugar
1 c. brown sugar

Then add:
2 eggs

Beat until light & fluffy. Add flour mixture and mix well.

Then add:
2 c. rolled oats (Grandma doesn’t use instant oats, but Aunt Sally does – it makes cookies 1 pkg. semi-sweet chocolate chips a little less dense)
1 tsp. vanilla

Dough is crumbly. Drop by tsp. on greased cookie sheet. Bake at 350 degrees for 15 minutes.


Date-filled Oatmeal CookiesGrandma Irvin made these cookies every Christmas. They are like little pies! These were my favorite!

Cream 1 cup shortening and 1 cup white or brown sugar.

Sift 2-1/2 cups flour with ½ tsp. baking powder and ½ tsp. salt. Add 2-1/2 cups rolled oats.

Add alternately with ½ cup water to first mixture and blend well.

Make date/nut filling by combining ½ cup sugar, ¼ cup water, 2 cups chopped dates and ½ cup chopped nuts. Cook till thickened and well blended – stir constantly and cool before filling cookies.

Roll dough to ¼” thickness. Cut in rounds. Place 1 tsp. filling on each cookie and cover with another round. Press edges together with tines of a fork and bake at 350 degrees for 10 to 12 minutes



Death by Chocolate Cookies
These cookies are a little pricey to buy all the chocolate – but they are so yummy, especially if you’re a choco-holic! 2 pkg. (16 squares) Bakers semi-sweet baking chocolate ¼ cup firmly packed brown sugar ¼ cup butter or margarine 2 eggs 1 tsp. vanilla ½ cup flour ¼ tsp. baking powder 2 cups chopped nuts (optional) Heat oven to 350 degrees. Coarsely chop 8 squares (1 pkg.) of chocolate pieces; set aside. Microwave remaining 8 squares chocolate in large microwaveable bowl on high 1-2 minutes. Stir until chocolate is melted and smooth. Stir in sugar, butter, eggs and vanilla. Stir in flour and baking powder. Stir in reserved chopped chocolate and nuts. Drop by ¼ cupfuls onto ungreased cookie sheet. Bake 12 to 13 minutes or until cookies are puffed and feel set to the touch. Cool on cookie sheet 1 minute. Transfer to wire rack to cool completely. Makes about 1-1/2 dozen cookies.

Fudgie Scotch Ring (or decorated Fudgie Christmas wreath)

I honestly don't remember this one--but it's fudge! You can't go wrong!1 – 6 oz. pkg. chocolate chips 1 – 6 oz. pkg. butterscotch chips 1 can Borden’s sweetened condensed milk Melt together in double boiler over hot (not boiling) water. Stir occasionally until it thickens. Remove from heat. Add: 1 cup coarsely chopped walnuts ½ tsp. vanilla Blend well. Chill for at least an hour until mixture is thick. Line bottom of 9” pie tin with 12” square of foil. Spoon chocolate mixture in mounds to form ring. Decorate as desired. Chill and slice to serve.

Melting Moments
Another Grandma Irvin recipe.
Mix 1 cup butter or margarine with ½ cup confectioner’s sugar. Beat until light and fluffy.

Add 1-1/4 cups unsifted flour and ¾ cup cornstarch. Mix well, cover and refrigerate at least 2 hours.

Make into 1 inch balls. Bake at 350 degrees for 10 minutes. Cool

Glaze: Mix. 1-1/2 cups confectioner’s sugar, 3 tbsp. orange juice and grated orange rind. Swirl top of cooled cookie in glaze and let dry (better to frost with a knife.)

Oatmeal Bars

These are YUMMY!  Very rich!  I like to put in peanut butter chips and chocolate chips! 

1 c. all-purpose flour

1 1/4 tsp baking powder
1/4 tsp salt
1 c. brown sugar
3/4 c. (1 1/2 sticks) unsalted butter, softened
1 tsp vanilla extract
1/4 c milk
2 c quick oats
1 1/4 c semisweet chocolate chips

Heat oven to 375. Coat a 8x8x2 baking pan with nonstick cooking spray, set aside.

in a small bowl, whisk flour, baking powder & salt together. In a large bowl, beat sugar & butter on medium-high speed until fluffy. beat in vanilla. Reduce speed to low and beat in milk, then flour mixture. stir in oats & 1 c. of chips.

Spread batter into prepared pan. bake for 35 min. or until wooden pick comes out clean. cool completely on a wire rack. microwave remaining chips for 30 seconds; stir until smooth & drizzle over bars. cut into 16 squares.

Peppermint Patsies

Move over peppermint patties--we have a new HOMEMADE patty in town!  This is my FAVORITE christmas cookie!

1 lb confectioners sugar
3 TBSP unsalted butter, softened
1 TBSP peppermint extract
1/2 tsp vanilla
1/4 tsp salt
1/4 cup evaporated milk
2 cups semisweet choc chips
2 TBSP vegetable shortening

Put wax paper on cookie sheets. In a large bowl mix at medium speed- butter, sugar, extract, vanilla and salt until combined.  Then add milk and mix well

Roll the dough into 1 inch balls and place on cookie sheets.  Refrigerate 20 minutes.  Use a clean glass with a flat bottom and flatten each ball to 1/4
 thickness.  Refrigerate 30 minutes longer then freeze for 10 minutes

In a double boiler, melt the chocolate and shortening.  Stir until smooth.  Let cool for 10  minutes.  Thendip the patsies into the chocolate, turning to coat.  Place patsies on wax paper and freeze for 5 minutes to harden the cookies.


Secrets aka Bon Bons
This is my Grandma Irvin's original recipe. I make a variation of this recipe-I use1/2 C. margerine, 1 Tbsp of vanilla, 3/4 C powdered sugar (Cream these) then add 1 1/2 C. flour and 1/8 tsp salt until you get desired crumbly consistency. I use Hershey kisses and Marschino cherries for the middle. Bake at 350 for 12 - 15 minutes. Cool then dip tops in melted Choc chips and decorate.

1 cup soft shortening
½ cup sifted confectioners sugar
2 tsp. vanilla
2 cups all-purpose flour
½ tsp. salt
1 cup uncooked quick-rolled oats
36 candied cherries
1 pkg. semi-sweet chocolate pieces
2 Tbsp. milk
Chopped nuts

Sift flour with salt. Mix shortening, sugar and vanilla until creamy. Add flour mixture to shortening mixture and mix well. Stir in oats. Dough will be quite stiff. Shape 1 Tbsp. dough around each cherry. Place 2” apart on ungreased cookie sheet. Bake 25-30 minutes at 325 degrees until done. Cool

Melt chocolate with milk over hot water (or in microwave) – mix until smooth. Using tongs or two forks, dip tops or ends of each cookie into chocolate. Then, if desired, roll in chopped nuts. Drain on wire rack. Makes 36 cookies.

Soft Chocolate Chip Pumpkin Cookies

These are almost too soft to be a cookie...but what a great way to get some extra vegetables into your kids.

1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)

Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well. Add vanilla, chocolate chips and nuts.3. Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.

Pesto Pasta Salad

This recipe is from Rachael Ray. I think it has a fabulous pesto recipe which uses basil, parsley, & mint. I use cashews for the nut. YUMMY. For the meal, I usually add lots of different veggies & even chicken instead of just tomatoes. Makes a great main dish or side dish and it's good hot or cold.

Beef Dishes

Beef EnchiladasYummy recipe! I use small corn tortillas so that I have a lot more enchiladas.

1 lb ground beef
½ cup onion chopped (one medium onion)
½ cup sour cream (I use nonfat plain yogurt)
1 cup shredded cheddar cheese
2 Tbsp chopped fresh parsley (or 2 tsp dried)
¼ tsp ground pepper
1/3 cup chopped green bell pepper (1 small pepper)
2/3 cup water
1 Tbsp chili powder
11/2 tsp chopped fresh oregano (or ½ tsp dried oregano)
¼ tsp ground cumin
2 whole green chilies chopped (I omit if Ky is eating with us)
1 clove garlic minced
1 can (15 oz) tomato sauce
corn tortillas
shredded cheese, sour cream and chopped onions to place on top if desired

Heat oven to 350. Cook beef. Stir in onion, sour cream, 1 cup cheese, parsley & pepper. Set aside. In another pot heat bell pepper, water, chili powder, oregano, cumin, chilies, garlic, and tomato sauce to boiling, stirring occasionally; reduce heat to low. Simmer uncovered for 5 minutes. Place enough sauce in the bottom of your casserole dish to cover the bottom. Spoon about ¼ cup of beef mixture into each tortilla, fold and place in the pan. Poor remaining sauce over the enchiladas. Bake uncovered for 20 minutes or until bubbly. Garnish with shredded cheese, sour cream and onions.
 (Be sure to make with the rice below!  YUMMY!)

Fall off the Bones Ribs

Wow!  After combining several different recipes and adding a bit of Jessica--I have got it...An Awesome set of ribs!  My kid DEVOURED these and we had to cut them off--that says a lot with my picky eaters...Here is what you do....

Ribs
3/4 cup Soy sauce
1 tsp onion powder
1 tsp Garlic powder
1 tsp salt
1 tsp black pepper
bottle of your favorite BBQ sauce.

Put ribs in a pot.  Fill until covered with water.  Add to it, 1/2 cup to 3/4 cup soy sauce, 1 tsp black pepper, 1 tsp onion powder, 1 tsp garlic powder and 1 tsp salt.  Boil the ribs for 45 min to 1 hour. Turn off the heat and leave until 1 hour before dinner.

Preheat oven to 325.  Place ribs in a pan and smother top in BBQ sauce.  Cover and put in the oven.  After 30 minutes turn ribs over and smother other side in BBQ sauce.  Return to oven for another 30 minutes.  YUMMY!

Ground Beef Hash
1 lb ground beef
1 lb sausage
4 sliced carrots
1 diced onion
4 cubed potatoes
2 cans cream of mushroom soup
1 tsp garlic powder OR 4 cloves chopped
salt & pepper to taste

Preheat oven to 350.  Brown the beef and sausage.  In a 15x11" pan combine the meat with carrots, onion, potatoes, soup, garlic and salt & pepper.  Cover with foil.  Cook 1 hour. 
Jessica's Spanish Rice

2 tablespoons olive oil
1 cup uncooked white rice
1 onion, chopped
1/2 green bell pepper, chopped
1 clove garlic minced
2 cups chicken stock
1 (10 ounce) can diced tomatoes and green chiles
2 teaspoons chili powder, or to taste
1/2 tsp cumin
1 teaspoon salt

Brown onion, pepper & garlic in oil.  Add rice and cook until browned.  Add chicken stock and tomatoes and simmer on the stove covered for 30 minutes.  Add chili powder, cumin, and salt.  Mix and serve.



Mini Meat Loaves

I'm not a big meat loaf fan, but this is a pretty good recipe. I make just the meat loaf--not the green beans (though that may be good too.)

Shepherd's Pie

This recipe is the basics of my Shepherd's Pie. The mashed potatoes, I make myself, and they change flavor depending on the mood. Mash potato basics...don't cut off the skin, just wash well. Chop up, boil in water until soft. Drain. Mash with some butter, milk, salt, and pepper. Add what you like--garlic, chives, cheese....mmmm...potatoes.

For this recipe, I recommend worcestershire sauce instead of ketchup. I also like to add garlic to the meat. I don't do the mashed carrots, but I use an array of veggies in that layer---I often will just use a frozen blend. Enjoy!

This casserole is quick and freezes well. The kids DEVOUR it!



1-2 lbs ground beef

1 diced green pepper

1 diced large onion

4 cloves of garlic minced or 1 heaping tsp of garlic powder

2 tsp salt

2 tsp chili powder

2 TBSP honey

1 (28 oz) can of diced tomatoes

2 cups water

1/2 lb egg noodles

2 cups shredded cheese, whatever you like



Preheat oven to 350. Cook ground beef, pepper, onion, and garlic in skillet. Place in a 13 x 9 pan. Stir in salt, chili powder, and honey. Add tomatoes and water. Bake for 30 - 45 minutes. When liquid is boiling add noodles and top with cheese. Cook 30 minutes longer. serves 6 - 8.

Turkey Cheeseburgers

Okay--so it is not beef--but it is the same idea...YUM!

1 package (about 1-1/4 pounds) ground turkey
1 medium-size zucchini, trimmed and grated (about 1 cup)
1 cup shredded Cheddar cheese
1/2 teaspoon salt
1/2 teaspon onion powder
1/2 teaspoon dried basil
1/4 teaspoon black pepper
--now I just cooked these like hamburgers--but here are the technical instructions..
1Heat broiler, arranging rack so that burgers will be about 2 inches from heat.2In a large bowl, combine turkey, zucchini, cheese, salt, onion powder, basil and pepper. Mix well and form into four flat patties, each about 5 inches.3Place burgers on a broiler pan and broil 6 minutes. Carefully flip burgers and continue to broil an additional 6 minutes, or until burgers register 165 degrees F on an instant-read thermometer.4Toast rolls, if desired. Stack rolls with burgers, lettuce leaves and sliced tomato. Serve warm.

Sausage

STUFFED BAKED ZUCCHINNI

Something else to do with zucchini....yummy!

6 medium sized zucchini
1/2 pound (100 g) fresh cooked mild Italian sausage
3/4 cup day old bread (not packed)
4 tablespoons grated Parmisian cheese
1 egg
1 clove garlic
1 medium-sized onion
1 small bunch parsley
1 tablespoon unsalted butter
1 tablespoon olive oil
1/2 a bullion cube
Thyme, Salt & pepper to taste
1/2 can of tomato sauce

Moisten the bread in cold water. Salt some water in a large pot and bring it to a boil. While it's heating cut the zucchini in half and scoop out the pulp. Mince the pulp with the onion, garlic and parsley, and sauté the mixture in the butter and oil until it is lightly browned, then crumble the bullion over it and transfer it to a bowl. Squeeze the bread dry and combine it, the egg, the cheese, and the meats with the vegetable mixture. Mix well and season the stuffing to taste with salt, pepper and thyme.

By now the water in the pot will be boiling; add the zucchini and cook them for 5 minutes from the time the water resumes boiling. Then remove them and set them upside down so they drain as they cool. Preheat your oven to 380 F.

Fill the zucchini with the stuffing, pressing it down firmly. Arrange the zucchini in pan, brush them with the tomato sauce, and bake for 25 minutes. If they appear to be overbrowning, cover them with some aluminum foil for the last 10 minutes. Serve at once.

Christmas 2007






Whew! I am going to catch up on these entries soon! So we get back from San Diego, Rob works on Weds & Thurs and Friday he took off---which was good!

So Friday we began our annual cookie baking. Like last year, the amount of cookies we made was small (we have a little guy after all.) The big difference this year was that we had an extra helper (or deterrent) in the kitchen. Ky LOVED making cookies. I tried to get him to help me cut out ginger bread cookies, but he wanted to eat the dough instead. Then I let him watch me make bon bons---this was going pretty well. I put the pans just out of his reach, and he would point to the cookie and say "What's that?" and I would say "bon bon." He would then reach for the cookies and I would say "no" and he would pull his hand back. This went on for a while and then Ky broke the pattern. He must have been scheming---somehow he was able to extend his arm and extra inch and quickly (and I mean he was fast!) he grabbed a raw cookie and stuffed it in his mouth. I was shocked---and then overcome with laughter. This little boy had a huge blob of dough in his mouth. It was funny he could hardly chew! And juice from the cherry inside started dripping out of his mouth. Yeah--we grabbed the video camera at this point. Silly boy! He was a mess at the end of our baking but he had tons of fun! I can't wait until next year with him!

Saturday we finished up our baking and rang bells for the salvation army. This year, with Ky being older I knew I could not ring alone with him, so Rob and I signed up together and played tag team with Ky while we rang the bell. For the first hour we actually had a band playing behind us. It was loud--but we made a killing. Bands and babies---what a combo. Ky did really well (better than I thought) with ringing the bell and actually rang the entire shift. We will have to see how next year goes.

Sunday we were off to Milwaukee. We dropped Ky off at G'pa and G'mas and then were off to see the Christmas Carol with Rob's mom and Jan. We used to do this every year, but we had missed the last year with Kylan. It was nice to go again. The only bad thing was the roads. We ended up getting to MKE a little later than planned and just made the show on time.
Afterwards we picked up Ky and went back to Nana & G'ma Jan's for the afternoon. Kylan had a blast of course! He loves spending time with Nana. She read him lots of books and they wrestled some on the floor ---yeah--he is such a boy! Then he played the "Everybody smell my stinky feet game." Which is really cute--at first--and then you kind of get tired of him shoving his toes in your face.

He also enjoyed opening up his presents. He got some books, a puzzle, and Elmo slippers. The boy was in heaven--books--you can't go wrong. We also ate yummy pasta! Oh yeah and Rob and I took all of mom's and Jan's quarters in a dice game. That was fun.

Monday was a nice and relaxing day. We enjoyed just being with each other and went to service that night--and don't let me forget--Ky slept in. I think that was his christmas present to us. He woke up at 6:30 we brought him into bed with us and then I --yes I woke up at 10 and got the boys up. Christmas eve was a very nice day at home in front of the fireplace just being with each other.
On Christmas, Ky woke us up as usual. We went downstairs and I had his new train table (which I built--and isn't quite completed yet) set up and running. The boy was ecstatic. He loves trains. CHOO CHOO!--that's what Ky calls them.

He played with that table for the longest time. We set out both tracks--one from his birthday and the other I picked up at a garage sale. He had a hard time determining what to play with. We also picked up some assorted cars & planes as well.

It was a little hard to get him to open the rest of his presents. A couple of favorites included the drag racing set (seen above) and his dog towel or as Ky says "ABOO ABOO" (baby for woof woof). Let me say Christmas is so much more fun with little ones. Ky doesn't understand about Jesus yet--but it is neat that Jesus has made it into his vocabulary. I set up my nativity in early December and he would say to me "Please Jesus"--which meant--"will you pick me up and let me see baby Jesus?"--we had the nativity on a high shelf out of his reach. Ky also thinks that any large book must be a bible.

We put Kylan in his train outfit for the day and topped it off with his new train hat from San Diego's Train museum (see pic above). He was pretty darn cute. And he knows the hat is a "choo choo hat." By the time we were dressed and enjoyed our annual baked fruity french toast, we had to get on the road to Milwaukee. Debi wasn't feeling well, so the girls were responsible fro getting the dinner done--but lets be honest--Debi is always in charge so she directed us watching closely that everything was done right.

Dinner was good--pasta was yummy! And then the mounds of presents were opened. Ky wanted to help Auntie Steph open her gifts. Poor Dominic slept through the event. A good time was had by all--and G'ma Bucky left a memory for Pops by clogging up the toilet (not the first time she has done this.) We all went home full and happy..
So that was Christmas. WHEW!!! And I still haven't caught up on my blog entries. My mom got married a few weeks ago so I still have to get to that one. SOON!
In the meantime--Ky is mentally a 2 year old. He knows what he wants and he wants it now. He will tell you what he wants, but when you can't decipher it, then he gets mad. He is a polite boy though--he does say "Thank you" or "TEE TOO" when you give him something--and he always says "Excuse me" after he farts or burps (CU ME). In fact now he farts on purpose just so he can say excuse me, and if he can't fart then he will make the noise with his mouth. Crazy kid! Definitely all boy! He also has a thing for eyes. Poor Bear has been poked in the eyes way too often lately--and today he poked a baby in the eye. We are telling him no and that it hurts, but he doesn't seem to get it. Ah well...Well until the next post...C-YA!

San Diego--the final part















Sunday we were up early and stopped in La Jolla to check out the beach and the sunbathing seals. (This was after the mystifying and angering night/morning of parking our car---I don’t think I need to write about it—just something for Rob and I to remember.) So back to La Jolla. It was beautiful. Ky played in the sand a little and we checked out the cliffs. We then went to Children’s beach in La Jolla and watched the seals. They didn’t do much, but it was pretty cool to just watch them in their own element. We did this all in like an hour—because of course we had a wedding to get to.

After La Jolla, we went to see Debi’s cousin’s house in Vista. His house is really neat! (Yup the wedding is coming—just wait.) He is an architect, so of course it was fabulous. The floors matched the counters and everything! Very cool! And wow you should have seen the views from his house---you can get an idea from our family pic with us all dressed up. It was amazing. He also had an orchard of tangerines, oranges, grapefruit, avocados, lemons, and limes. We got to take some freshly picked produce home with us. YUMMY!

After the brief pit stop—and a change of clothes, we were off to Orange,, California for Anne, Rob’s cousin’s wedding—told you it was coming. We were happy that we arrived with plenty of time to spare. We caught up with the family stories and sat down and waited for the bride. Anne was beautiful and gleaming. The wedding went well without a hitch. (Unfortunately, due to poor lighting, most of our pics did not come out very well.) The bride and groom—who were teachers at the same school—had invited their students and even had a special reception for them after the wedding. That was very neat!

Afterwards, we were off to check into the hotel, and then to the reception. We had a good time. Rob and I enjoyed dancing—okay I enjoyed dancing, Ky enjoyed playing with Grandma’s toes and harassing Ryan. Towards the end, we knew we had to get Ky home and to bed. The boy was running like a mad man. He was definitely overtired from the day. We went back to the hotel and Ky had crashed in the car. We laid him on the bed and he wouldn’t wake up. Rob broke a glass, the housekeeper came and vacuumed, and Ky still would not wake up. He was out. However, around 2 AM Ky decided it was time to get up. We really struggled to get him to go back to sleep. It wasn’t until an hour or two later that we finally got him to go back to sleep.

The next day we were not really feeling refreshed, but we had to get moving to get to Disney Land. We met up with Pops, Debi, and Ryan for a quick breakfast at Denny’s—however at the time it seemed like a very slow breakfast. We wanted to get to the park on time since cousin Paul was waiting for us (he had our tix—thanks to the military discount.) So we left Denny’s a few minutes late, but what really hurt us was Disney Land’s parking. Okay—time to complain. You pay to park at Disney Land and then you pass the parking lot which of course says it is full—and are sent out on a highway with no idea of where to go. Next thing you know you are being forced to get back on the interstate---but wait if you make a u-turn at the light where the interstate begins, you can get to extra Disney parking—sound confusing? Well it was! It was very annoying—we were lucky we even got in the left turn lane (or u-turn lane) and then only 3 -4 cars could turn per light—so it took forever! It was RIDICULOUS!!!!

We were very angry by the time we were parked.

So—now time to get happy. We are at Disney Land! WOO-HOO! We met up with Paul and his friend Lisa and we were off to the park. Paul was supposed to meet his nieces at “It’s a Small World” so we all headed that way for the ride. And when we didn’t see them, we decided to go ahead and jump on the ride since the line was so short. Ky was bewildered. His face was just in awe of all the characters and music. There is a picture above of him on the ride—and that was pretty much the look he had the whole time. It was neat. He really had a lot of fun.

The cool thing about Disney Land was that Ky could go on pretty much every single ride. After Small World, we went on Pinochio, Toad’s wild adventure, and the carousel. The boy had a great time. I honestly don’t remember all the rides we took him on, but it was a lot. We did Pirates of the Carribean and then met up, or attempted to meet up with Pops and Debi. However, Pops and Debi got stuck on a ride so we ended up waiting for them for a while. Then we did the big Ky switch off---we gave them Ky, they gave us Ryan. That was great! We took off and did all the big rides that we couldn’t do with Ky—Space Mountain, Indiana Jones, ---argh I can’t think of the rest…but you know what I am talking about.

Meanwhile Pops and Debi were meeting and greeting Goofy. There were some pics taken of Ky in Goofy’s lap, but he is just staring up Goofy’s big old nose-so we didn’t purchase them. We should get some from Debi’s camera later.

When we got Ky back, he quickly crashed. We went on a couple of more rides and then called it a night at Disney. We didn’t stay for the last parade or the snow—yes they make it snow! Perhaps next time. It was getting cold and we were getting hungry and I was excited about meeting up with my old best friend—Christi. And I mean OLD best friend. We are talking elementary and middle school. Christi is in the last picture---it was dark, so it didn’t come out too well…

Christi lives in Newport Beach, so we met up with her for dinner. It was great seeing her again and catching up on what she has been up to. She is now a teacher (how ironic) and does a lot of mission work. She took us to a local Mexican restaurant which served yummy food and then took us for a walk on the pier. We enjoyed the ocean via moonlight.

I could put a lot more in this blog entry, but I am so behind that I think I am going to call it quits….

The plane ride back went fine. However, we did have problems getting our tickets—the computer was down, and going through security (the line literally wrapped around.) We were there 2 hours early, but due to these delays we barely had enough time to get a lunch—and we ended up eating it on the plane. We also got stuck in Kansas City for a bit as our plane got delayed. That made for some good time to get a few drinks. We left Ky with Uncle Ryan and attempted to relax.

Back in Milwaukee—IT WAS COLD!!! Not really that cold, but coming from San Diego it sure felt cold.

So all in all the vacation was fantastic. We crammed just about everything we wanted to do in our short time there—and we made a lot of memories.
