Canning Recipes

Schnake Apple Butter

15 or so medium sized tart apples ( I use cortlands or macs)
4 cups of apple juice or cider
2 tsp ground cinnamon
3/4 tsp ground allspice
1/4 tsp ground cloves
2 cups brown sugar

Wash, core, peel & quarter apples. Place apples in a large pot with juice. Bring to a boil then cover the mixture and let simmer for 30 minutes, be sure to stir occasionally. Mash apples in juice and then measure out 10 cups. Add remaining ingredients to the 10 cups. Bring to a boil and reduce heat again. leave uncovered and over ver low heat for 1.5 hours until mixture is very thick. Stir frequently.

Spoon apple butter into hot sterilized canning jars. Leave 1/4 inch head space. Wipe rims and adjust lids. Place in boiling water canner for 5 miutes (half pints) or 10 minutes (pints). The result is 4 pints.

Apple Jelly

Save your cores and peels from making apple butter, apple sauce, and apple pie in a jar to make this yummy jelly! And to spice it up a little--I add a few tsp of cinnamon with the sugar.

Apple Pie in a Jar
This is ingenious! So easy to make--and then if you ever need to put together a quick dessert, plop this bad boy in a pie crust, bake, and you are set!

28 cups peeled apples, sliced
1/4 tsp nutmeg
4 1/2 cups sugar
1 tsp salt
1 cup corn starch
10 cups water
2 tsp cinnamon
3 TBSP lemon juice

Pack apples tightly in quart jars. Make syrup using the remaining ingredients except lemon juice. Cook and stir until thick and bubbly. Add lemon juice. Add syrup to the jars using a spatula to get out all air bubbles. Seal and process jars in water bath for 20 minutes. Makes 7 quarts of filling.  I have had problems with this one overflowing when canning--I recently tried the one below and it was much more successful!

Apple Pie in a Jar II

This one I have canned, but have yet to taste.  This one was much more successful in canning.  I look forward to tasting it!

Spiced Cherry Jam

This is the basis of our Spiced Cherry Jam. We used this recipe and made some slight variations, for example we added some add'l spices and nixed the dye. This is TOO good!
