Cakes

Hot Fudge Sundae Cake

I honestly haven't tried this one yet--another Grandma Irvin recipe.


1 cup flour
¾ cup sugar
2 Tbsp. cocoa
2 tsp. baking powder
¼ tsp. salt


In ungreased 9” x 9” baking pan, stir together first 5 ingredients.


½ cup milk
1 Tbsp. oil
1 tsp. vanilla


Stir in milk, oil and vanilla 1 cup chopped nuts Stir in nuts and spread evenly in pan. Sprinkle with:

1 cup packed brown sugar
¼ cup cocoa


Pour 1-3/4 cup very hot tap water over batter. Bake at 350 degrees for 40 minutes. Spoon sauce from pan over servings or top with ice cream and spoon sauce over top. Good served warm or cold. Very rich and good!


Mini Black-Bottom Cupcakes



These are from Aunt Sally. These are a pain to make, but they are so good and people ask for them every year.


Heat oven to 350 degrees. In medium bowl, combine

16 oz. cream cheese,
2 beaten eggs,
¼ tsp. salt.

Beat well and mix in 12 oz. semi-sweet chocolate chips. Set aside. In large bowl, sift together
3 cups flour,
½ cup unsweetened cocoa,
2 cups sugar,
2 tsp. baking soda,
1 tsp. salt.


Then add to this mixture

2 cups water,
2/3 cup of oil,
2 Tbsp. white vinegar,
2 tsp. vanilla.


Mix well. Using miniature muffin tins and paper liners, fill ½ full of chocolate mixture (about 1 Tbsp.) – then drop 1 tsp. of cream cheese mixture in center. Bake 20 – 23 minutes. Makes 100 -110 mini cupcakes.
