Casseroles

Beef, Rice, & Cheese Casserole

This recipe is simple to make, the kids like it, and it freeezes GREAT!  I double the recipe and use 1/2 ground turkey and 1/2 ground beef.  We then eat half for dinner and freeze the rest!

Cheese Sausage Spinach Pie

1 lb italian sausage (bulk)
5 eggs
20 ozs spinach (2 packages frozen chopped, thawed and squeezed dry)
4 cups (16oz) shredded mozzarella cheese
2/3 cup ricotta cheese
1/2 tsp salt
1/8 tsp garlic powder
1/8 tsp pepper
1 pastry (10 inch, double crust pie)
1 tbsp water

In a skillet, cook sausage over medium heat until no longer pink; drain. Separate one egg and set the yolk aside. In a mixing bowl, beat the egg white and remaining eggs. Add spinach, mozzarella cheese, ricotta cheese, salt, garlic powder, pepper and sausage; mix well.


2 Line a 10-in. pie plate with bottom pastry. Add filling. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry.

3 Bake at 375 degrees F for 50-60 minutes or until crust is golden brown and filling is bubbly. Let stand for 10 minutes before cutting.

Creamy Zucchini Casserole

Rob really liked this as a freezer casserole. I used plain yogurt instead of sour cream for a healthier yet tasty alternative.

Ground Beef Hash

Simple and yummy!

1 pound ground beef
1 pound sausage
4 carrots sliced
1 large onion diced
4 potatoes cubed
2 (10 oz) can of cream of mushroom soup
4 cloves garlic minced
salt & pepper to taste

Brown meats together.  Combine all ingredients.  Put in 9x13.  (This is a pretty big recipe--I usually do 1 9x13 and then freeze an 8x8 for a future meal.  Cover with foil.  Cook 1 hour at 350. 
Mexicali Hamburger Casserole

This is a yummy one.  Very quick & good.  I don't make the tomato toss--but perhaps in the summer I will with fresh ones from the garden. Mmmmm...

Pumpkin Black Bean Bake

This is great for the fall!

1 lb ground beef
2 cups cubed pumpkin pieces
1 coarsely chopped medium onion
1 15 oz can black beans--rinsed
1 cup corn
1/2 tsp salt
1/2 cup beef broth
3 oz cream cheese
1 8.5 oz package of corn bread mix
1 egg lightly beaten
1/3 cup milk
1/3 cup pureed pumpkin

Preheat oven to 400 F. Cook ground beef, pumpkin, and onion over medium heat until browned. Drain juices. Stir in black beans, corn and salt. Heat through. Stir in broth and cream cheese until blended. Transfer into 9 x 13 baking dish. In medium bowl stir corn bread mix, egg, milk, and pureed pumpkin until just combined. Spoon over beef mixture. Bake 20 minutes or until toothpick comes out clean.


Santa Fe Casserole

Great Casserole for the freezer. I nix the taco sauce and use extra salsa. I also add corn. I also nix the sour cream.

Simple Scallop Potatoes and Ham

This is a nice quick recipe.  (It's not cheesey--but I will add some shredded cheddar to the top of mine.)
