The Secret Part 3

12 + weeks now!


Yeah--and I am feeling much better. I am only nauseous a couple times a week--and am not needing as much sleep. I am also beginning to feel the little one move. It is funny to think that I didn't feel Ky move until 20 weeks--but I guess that is what normally happens when you don't know what if feels like.


I remember sitting at the computer at work after lunch and all these little punches in my stomach--it was like popcorn was popping. That was when I realize that Ky was moving. (Go figure that it was after a meal.)


This one I don't feel very often. It is very light, since the baby is only 3.5" long. Usually when I am lying in bed or reading a story to Ky, I may feel a little movement or almost a twitch.


I am also starting to show now. That is good because I had lost weight. Now I appear to be gaining it back.


We told Nana (Rob's mom) yesterday. Our "present" didn't go as plan--so we had to make do.

We had bought her a digital frame and were planning to give it to her as a present. We were going to preload it with pics of Kylan and then at the end and Ultrasound that we had written on the bottom "Happy Birthday Nana --Grandchild #2"). Well it turns out that the digital frame we bought was broke. So we then tried to transfer it on a CD. That turned into a big issue--however we finally got it loaded.


So we explained her broken gift and told her that we did have this CD with pics of Ky in its place. So we went to play it for her and well Jan's computer was an Apple. We couldn't get the slideshow to work. We had to go through it manually. Then our video camera batteries died and so we didn't even get her reaction on tape--did I mention that a moment before the ultrasound picture I also dropped our digital camera and "temporarily" broke it (I fixed it later) so I couldn't get a picture either. Well--as with Kylan--her reaction was priceless. Hopefully with Grandma Debi and Grandpa we get their reactions on camera.

As for my mom, we sent her a card in the mail with 5 bunnies on the front (Rob, me, Ky, the new baby, and Bear) and signed it respectively. I will let you kow in the blog how that went.

February flus and blues














ARGH!!!! PLEASE SNOW GO!!!!

This is always the worst time of year for me. I know the nice weather isn't coming yet, but I have the spring itch. We NEED nice weather. The flu has become really bad. I have had two bouts of it now. And Ky is currently on his third ear infection of the year. By the way--I have to comment that Ky only ever had one ear infection before I stopped nursing him. Since then, he has had three!!! All in a row!!! And since I am mentioning this, (boys fast forward if this is too *much* for you) I really miss nursing Ky. We stopped after 18 months. I weened him, other wise he would have kept nursing. And let me say he was a good nurser. He didn't go around pulling up my shirt or anything--we just nursed once a day for the last several months in the morning. It was wonderful snuggle and bonding time with my son. And now that he is weened, we really don't have the snuggle time any more. I miss that. Just another benefit to nursing your child.

So three ear infections--and they are miserable. Here are signs your child has an ear infection--they keep falling--literally. They cry when you put them to bed. They may have a fever. Their ear may actually turn red. They may pull on their ear--or they may do the "Shrug" alot--this is what Ky does. Oh and the crying. Yesterday Ky cried almost all day. He was miserable. I gave him tylenol and motrin--but it would only work for like 30 minutes and then he would begin crying again. Poor guy. I tried to coddle him and make him feel better, but there is only so much you can do until the antibiotics kick in.

Lucky for me, the antibiotics kicked in last night and he is a whole new kid today. Phew! It has been a rough winter for all of us.

So this past Sunday we went to the children's museum. Ky had a blast--of course. At one point he had put on 6 aprons in the "farm room". He then kept taking them off and putting them on. Silly boy! Ky's favorite thing at the museum was the green car. I think it reminded him of Uncle Adam's green car :) It was great just to get out on State street. We let him walk on the sidewalk--and then he would start to run and we would have to catch up with him. We had some wonderful ice cream at ColdStone Creamery--and Kylan turned to me and said "Mommy, I need more ice cream". A kid after my own heart. I am amazed by what he says and what he picks up. Last night he told Daddy to "kiss mommy cheek". So Daddy did. Then he pointed to my other cheek and said "kiss other side." I had now idea he knew the words "other side" let alone knew what other side meant.

His counting is also coming along. If I say the odd numbers, he will count the even numbers to ten. His favorite number is now 6. He gets really excited when I say 5, because he wants to yell "SIX!" (sometimes he starts yelling it when I say 4)

One of his favorite books is Dr. Suess's "Marvin K Mooney, will you please go now" He will sit in his chair and recite passages from the book as he is looking at it. "PLEASE GO NOW!" If you haven't read this book, you should---it is really funny when he reads it because he shouts out the phrases. "I said GO GO GO@!"

So we have been using timeouts pretty regularly with Kylan now. I don't know how effective they are. Sometimes after he sits on a time out he will go do whatever he just did (i.e. hit the dog) and then say "I go on timeout" and sit in his spot. I am not sure if he is just trying to figure out the cause and effect or if he is testing us (limits) or if he finds timeouts amusing. When you put him on timeouts he usually will start yelling "Sorry! I be nice!" I think he kind of gets it. I don't know.

He also will answer "no" now whenever you ask him a yes/no question. I think I have figured out that he does not know what it means. For example I asked him if he wanted banana. He said no, I started putting it away and he got really upset.

Ky has also learned to open door knobs--this is a problem. Open shut open shut...this is what I listen to all day now. ARGH!!! I am also a little concerned that one of these days he is going to lock himself in the bathroom--but didn't we all do that at one time or another? I guess that will just be another learning experience.
So Pics are mostly from the children's museum. We have a few of him in his highchair. One emphasizes his NEED to eat with a fork "Mommy I NEED a fork." You give the boy a fork and he will eat just about anything. The other--he was posing or something. It was funny. The two bottom ones are when our friend Wendy came over. He loves Wendy. She taught him to say "Peace Out!" He also ended up falling asleep on the couch near her with his feet propped up. He wasn't ready to go to bed. He wanted to watch the basketball game with Wendy (Basketball is also his other obsession.) Forks and basketball--Hmmm...an interesting mix!

The Secret part two

These last two months have just been dragging by.


You know I realize now that I didn't really blog much of my pregnancy with Ky. So with this baby I am going to try to blog more of the pregnancy...


I still have yet to have a day where my stomach has felt like itself. It is really quite freaky. I have to be careful because if I get too hungry I really start to feel sick--but then at the same time I don't want to overeat. I have missed or left events multiple times the past two months because I have felt so ill. I even called Rob to come home early one day from work because the nausea just came on me so quickly and strongly. 3 More weeks and they say I should be better!



Ky has also managed to pass the flu on to me twice this winter. And yes I got the flu shot and so did he. I am tired and blah!!! Let me just say--that I may get sick but I rarely get SICK! In the last decade of my life I have kneeled before the porcelin once--but let me clarify that was not due to an illness. This winter I have kneeled more times than I would care to say.


I apologize for all the friends and family that I have been short with or have just not been myself around. My emails, blog entries, and phone calls have really fallen behind. They of course have no clue what I am going through. I keep telling myself 3 more weeks...At the same time it is hard to believe that I am at week 10.



I realized the other day I have not taken one picture of Kylan so far this month. I don't know how to do the next normal blog entry. oh well. Nothing has been on track this month.


Well emotions are kicking in now. I am becoming explosive at times and short tempered. Ky and I did not get along so well today. It doesn't help when both of us are tired and cranky and Dad is gone all day due to work and classes. (Ky is getting over an ear infection.) I put him to bed early. I couldn't take it anymore. Tomorrow is a new day. Hopefully all will be better.


Oh yeah---8 week appointment. So it appeared that after I gained weight, I lost it all by week 8--go figure. Nothing specatular happened at the appointment. I was told not to play soccer though--and I was also told to try to shove things down even when I feel bad. I have had a lot of dizzy spells and the nurse told me it is because of my calorie decrease. So since then I have been shoving down more foods--and I have to say I feel less dizzy and the nausea is a little better. I think I have also gained a little weight back.



next day...

Rob and I went to the baby's first ultrasound. Little Jessicob was standing on his/her head. It was very cute. The baby then waved one of it's tiny hands at us. A whopping 3.4 cm long--mostly head--this baby is going to be as smart as Ky. Amazing. The little heart was beating so fast. 160 beats a minute. This is when it really starts to sink in and you want to tell people. Ahh....I will post a picture in the reveal blog. Congrats me--I'm a mommy again. Right now I can not think of a more incredible purpose.

BTW--a little side note. I had to drink 32 ounces of water before this appointment and boy did I have to go. In fact the ultrasound lady made me go because my bladder was so big it was hard to see the baby in the uterus. She said--only pee about a cup though! Yeah--you try to control it when you have to go so bad.

January Birthdays and such
















Long time no post---
So most all pics are from Lisa and Ryan's b'day party at Bucca's at the end of January. We had a great time. And even better, some extended family came (cousin Pete and his daughter Jessica) from California. Uncle Charlie passed a few days prior so they were in town for the funeral and joined us for dinner...
IT was sad to see Uncle Charlie go, but it was expected. He was battling Alzheimer's and just wasn't himself anymore. Uncle Charlie is G'ma Bucky's brother. I will always remember U. Charlie as a very loving man with a great sense of humor. Him and Debi shared a very close relationship--and I know it tore her up to lose him.
Okay--time for my favorite U. Charlie story. I believe it was Easter, and G'ma Bucky was once again talking about how she had lost *50* lbs in the last couple of weeks. U. Charlie turned to her and said "Hey Jenny, I know how you can lose weight fast." And she turned to him and said "Yeah--How do I do that?" And with the straightest face you ever saw he said "You chop off your head!" Ahhhh-- a priceless U. Charlie moment. And the look on G'ma Bucky's face I will never forget. The love between a brother and a sister.
Anyway, we haven't done a whole lot the last month. The weather has been terrible and we often feel penned inside. If it isn't below zero here, it has been snowing--and I mean snowing, 6 inches to a foot at a time. We have already broken Madison's all time snow record and are 10" beyond it--and we have a good month of snow potential days left. Ky hasn't gotten out a whole lot either. The pics above are a rare moment when it was actually warm--and of course snowing.
He loves the snow. He just sits there and eats it. Something his father taught him to do. Sometimes he falls over in the snow and can't get up (too many layers.) This is funny---you will then here a muffled "help pwease!" until you get him up.
We did go sledding once at a church retreat. Ky had a lot of fun for about half of the runs. The other runs he didn't like so much. I think he got annoyed if snow kicked up in his face and I think he wanted to have more time to eat snow.
Rob and I had a nice get away last week at a bed and breakfast. We went to see the Madison Symphony Orchestra and had a nice dinner at a little french restaurant that turned your food into works of art. It was a good get away--but of course got cut short because of an ice storm....The Roads were really badly flooded and even today there are still really bad patches of ice where your car can't grip the road.
Our kitchen is almost done. We just need to pick out back splash and do some touch up painting. It has come a long way. I am starting to move my decorating back up stairs. We still need to finish the office and our bedroom. We will see how far we get before the weather gets nicer. Ohhhh I miss the feeling of dirt in my hands. I miss listening to the snap of my peas as I pick them and the freshness of my sun kissed produce. Can you believe green peppers are 75 cents each right now! Outrageous! I need my garden. And Ky needs to get out of the house and play. I hope to teach him some basic gardening this summer.
Assuming the roads aren't terrible, Ky and I do get out pretty much every day. Between story time at the library, playgroup, open gym, my job at the Y, and walking club we keep pretty busy--but it still makes you stir crazy for the warm weather---or just to take a simple walk outside. BTW--Ky is awesome at story time at the library. He is so little and yet sits so well and listens to the books and gets excited for the songs. And currently at craft time he is the last kid to leave. I have to hide the crayons so we can go. You never saw such an intriguing 20 month old. The Librarian is very impressed with him. He loves the librarian. Last week he gave her a giant hug.

Ky continues to astound me. He is just so smart and understands so well. He is also a parrot. he will now say anything you say--and he will say complicated words like "cantaloupe" or "prophecy." He loves to put on dad's shoes and sling a bag around his neck and go to the door and say "see you tomorrow." He will also say "see you tomorrow" when he goes to bed. If something is unusual he will say "what happened?" For example the top of this sippy cup fell in the actual cup and he came up to me with it and said "what happened?"

Today he said to the librarian "thank you librarian". What an astounding kid! He is obsessed with music. He will point to the radio and ask for "music on." He also asked me one day if Daddy listened to music in his car on the way to work. I think the sentence was something like "daddy listen music in Vroom vroom?" (he prefers to say vroom vroom over car---and well don't we all.) He sings with a few of his singing toys--this cracks me up. We have a toy where Oscar the grouch sings "I love trash" And Ky sings "I uv tash". This morning he was singing the ABC's with me. He doesn't have all the letters down yet, but I would say there are about 10 or so he can get pretty well.
Sign language is coming back. I have been talking to my neighbor and she talked to me about some videos. So I have been renting them from the library. They are 20 minutes or so and they teach about 30 words using pictures and kids. Ky loves the video. He asks for it "video pwease!" I let him watch it once a day--and it has not only got his signing back on track, but his word pronunciation is much better. Ky can currently sign the following words-- fruit, apple, milk, more, please, hungry, eat, hat, aunt, grandma, and dog.

He is currently getting 3 of his "eye" teeth in (2 top and one bottom). That makes 5 teeth to go--1 eye tooth and 4 2-year molars.
Well I think that is all for now. Hopefully the weather gets warm soon. February is always the one of the hard months, though I often think March is worse. Just the word March sounds warm-but often it is just a tease...Ahhh...summer...

The Secret Part One

I am writing this more as a journal for Ky and the new one--yes that is right--the new one. I am not going to publish this until later--but I wanted to have some record...

So yes---I am pregnant with baby number 2. Rob and I had been talking about this and planning for a while, but once again I just wasn't ready for it to happen this fast. I thought I would have more time for mental preparation. So yup, I missed the monthly, but I told Rob that I didn't think I was pregnant. After all we had just started trying...


With Kylan--I knew a week before I missed. I remember being outside painting and feeling the pain of my shirt against my skin (which was weird) and then mood swings. I remember I just had the craziest outburst over nothing--and that was when I realized that I wasn't myself--and I knew. I kept it to myself until the day of my expected period. I was in tears, I was panicked, I was scared--and kept it all from Rob. Finally the day of, I broke down in his arms and told him. I told him I didn't think it would happen this fast (yeah I should have remembered this before number 2) and I wasn't sure I was ready--but now we had no choice. Everything was going to be changed forever!


Rob said he needed physical proof and he wanted me to pee on the stick. So I did and left it in the bathroom for him to look at. I didn't need to see it. Sure enough--there was evidence of little Kylan. WOW!

So number 2---I didn't have the same chest pains or mood swings. I did feel a little nauseous once or twice, but it's flu season--and I was hardly ever nauseous with Kylan. So I missed and then waited for it to come. I told Rob, I really don't think I am pregnant. Finally--I needed to know. I wanted to do some painting---and if I was pregnant, it would not be a good idea for me to paint. So while Rob was at work and Ky was eating lunch, I did the test. I came out and cried with Kylan for a few minutes. And then I called Rob---and well no I did not tell him. I tried to feel him out on when he was going to be home. I needed a little more time to adjust to the idea before I told him.

This may sound bad, my sadness over being pregnant--but you really need to think things through. When it actually happens--it is permanent, there is no going back. Am I happy I am pregnant-Absolutely! (the same for Kylan). But at the same time I need to mourn my loss--because there is some loss when you have a child. It is like moving. YOu are excited about moving, yet sad to leave your old home behind--but you know the move is all for the better.


Same with a kid. Now there is even less freedom, more commitment--not only for myself, but for Rob and Kylan. And then you start to wonder, can I really still give Ky all the attention he needs with a new baby. How am I going to have enough time for both? Will I now miss special moments with Kylan? Will Rob and I ever sleep again? Are Rob and I still going to have enough time for each other? Then you look at all the positives.


Together with God, Rob and I have created a whole new person. God has entrusted us with this tiny life. I have someone new to love and watch grow. Ky will have a playmate--they are close enough in age that they could become best friends. And this child, like Kylan will be one of my closest companions.

I told Rob that night---I told him at our dinner prayer. I prayed for us, our family, and our home, and then I prayed for the new little one's health (watching Rob the whole time) and said Amen. He was excited and ecstatic and a little surprised as well--since I had kept telling him I didn't think I was pregnant.

So Kylan was Robessica in utero; the new one gets to be Jessicob. I am at week 7 or so....It has been a very rough first couple of weeks. I have been very nauseous and very tired. I am having problems sleeping at night. I am falling behind on housework and projects. I was not like this with Ky --proof every pregnancy is really different. With Ky I was still teaching and felt nauseous once in a while--but I still slept well at night. Right now I am struggling to get through the day sometimes---and I have to say Ky has been great!

Sometimes I just lay on the couch and Ky will nicely play with toys or bring books to me to read. What a great kid he is. I keep telling him he is going to be a big brother---but let's be honest. The little guy has NO clue.

So at 8 weeks I got my first ultrasound of Ky. With a new HMO , I am meeting to talk with a nurse practitioner at 8 weeks to find a suitable doc. So I have no idea when I am actually going to have my first doc appointment. --BTW--so I called the clinic to tell them I was pregs---well they said the stick wasn't adequate and that I had to bring in my own urine sample for it to be tested in their lab. So here I am toting a peanut butter jar of urine into the clinic for testing--this was not my proudest moment--They have me take it to the reception desk---where I have to tell the lady (in front of other people) that I have this jar of pee that needs to be tested...Yeah---this was not the most comfortable moment of my life...


So the nurse calls back--and she sounds depressed, just down in the dumps and tells me that my test was positive. The weirdest phone call--this should be exciting! and I am like--yeah I know--and then she is almost asking me if she should congratulate me in her depressed mood....Very weird and sad experience if she feels she must be this way for all patients.

Anyway--so yeah---i don't know how this is all going to go. We are thinking of waiting to tell people until March. Perhaps a good birthday present for Rob's mom--she really enjoyed Ky as her christmas present a few years back. We will have to see how long we can conceal it.

I know i have already gained weight--which is nuts since it is so early---but i have been weighing myself. They also say you show a lot quicker the second time since your muscles aren't as tight anymore. Hopefully we make it until then. The winter will be our coverup (lots of layers.) One last thing-- due date is September 24. I honestly hope the baby is born the first day of fall--which is possible.


So yeah this also ruins or changes a few plans--sorry Becky--I don't think I will be able to play the entire season of soccer with you; and Met friends--I think an August date for the reunion would be a bit better than September. And as far as camping this summer; I really want to go--but we will have to see.

Mom's wedding

















Fast forwarding--or actually rewinding to January 12TH! My mom's wedding to Terry. We arrived in the city Friday afternoon and went straight to the rehearsal dinner. We all rehearsed just fine! It was funny--Jeff and John were groomsmen and Terry's brother taught them how to walk gentlemen like (escorting their ladies) and then how to guide them up the stairs. They did pretty well after their lesson. After the rehearsal dinner the boys and girls split up for surprise bachelor/bachelorette parties. The ladies of the church had a nice little snack session set up--and the women spent their time gabbing. The men went to Steak N' Shake where I am told that some of the older men--including the pastor were attempting to fix Johnny up with the waitress. Poor guy--take your time boy! He may be the last unwed sibling, but he is also the youngest at 19-- he has plenty of time.

After that we went back and crashed at Joel & Jamie's. The next day we were up and prepping for the wedding which was to be at 1:00. Now this is complicated--1:00 is Ky's naptime, so I had no idea what to do other than keep him up. (He was the ring bearer and had a big job to do.) We also had to be at the church by 11:30 for pics--so there really was no time for an early nap.
Ky did alright for the most part--he refused to wear his boudoir (Sp?), and was not really in the mood for picture taking. Considering I know how grumpy he can get---he did pretty well.
So let's get to the good stuff. My mom was beautiful-of course--and full of nerves. You could just tell. We were waiting in the nursery for the wedding to begin and my mom kept peeking out at the sanctuary to see Terry and the number of people that were there. Ky refused to walk with Dad down the first part of the church, but when he got to the main aisle, he sucked it in and did his best to walk like a good little ring bearer. Then came my mom. Joel walked her down and even whispered a few things in her ear to help her from being too nervous. Then Terry went and got her and guided her up on stage. --Now standing right behind my mom it was clear that she was very nervous. I could hear the rustling of her flowers as her hands were shaking, and she did start swaying at one point--which made me very nervous. Terry was no exception. He was looking a little sweaty himself--and was pretty tightly clasping his hands. What cute kids they were!
They both had a good set of vows as well.
Afterwards we all exited gracefully.
Alright--a little more about Kylan---the boy was overtired during the ceremony. He was a little fussy on and off and then passed out before the end. It was so funny Mom was reading her vows and then I hear Ky in the background going "PEEP PEEP - CHICK! PEEP PEEP" I knew he was reading his little chick book.
The food was good and the cake even better (but of course!) We helped to tear down and clean up the place after that and then it was back to Joel's for some sibling bonding. All the sibs came over and had a jam session and played Dominos---which I should have won! It was a good time. Sarah and Jeff showed us their pics from Israel and we really got to enjoy each others company.

We also took some good sibling pics. Brother James is included in one of them (he is kind of adopted)--we also tried to represent our ages by height...I think mentally Johnny was feeling a bit older than Jeff and felt he needed to represent.
BTW--the one pic of Ky feeding the snowman is really cute. He took that snowman put it in his highchair and fed him. He kept saying "eat milk". Funny boy.
The next day we were off early--as we had to destroy our kitchen before the counter people came. So a quick house update---everything is tiled, most walls have been painted--though some touchup/second coats need to be done, and now our beautiful new countertops with integrated sink have been installed. This was a difficult process since our kitchen does not have a separate water shut off. We actually had to shut off water to the whole house for a day while the counters were installed. And then we had plumbing problems and had to seek professional help. Turns out the new sink was much lower than the old one and so we had problems geting the plumbing to work out. The plumber was really scared too---he wasn't sure he could fix it---but I prayed hard and the Lord came through and it all worked out. I will have to post pics soon of all the changes we have done, it is impressive.
Okay---Ky updates
The boy is obsessed with counting and his ABC's. Can't do it on his own yet, but he will kind of sing "ABC, ABC" over and over to himself. In the bathtub, he will line up his ducks and count "3,4,9" Those are his favorite numbers. When he or someone else is leaving he will say "Peace Out" (thanks to our friend Wendy) and "See you tomorrow." His sentences are really coming along. He likes to eat bubbles---yeah I am not sure I can explain this one, but in the bathtub he yells "eat Bubbles" and tries to catch them and eat them. He also likes to eat snow---when we got dumped on the other day (13") Ky went out with dad and spent his time eating snow. He says "Baby Eat snow" Sometimes he will call himself Kylan which sounds like "Ky-yan". He loves the library and will decipher library books from his own (meaning he says Yibrary book). He is really learning names. He now says Grandma Debi and Grandma Jan--We are working on Grandma Maureen---but it is really messy when he says it right now.
The boy is the polite police--and it is almost sickening sometimes. And yes--I am responsible; I taught him. If you make a noise that even remotely sounds like a fart or burp (such as pushing a chair on a hard floor)---he will announce to everyone "Mommy Fart. Excuse Me" and will continue to say that until you actually say excuse me. He also says Thank you for just about anything. And he says Bless you when you sneeze.
Lately he has been obsessed with walking backwards. Our neighbor was really impressed when she saw him doing it. She said it was a "readiness" requirement for kindegartners. That was interesting to hear.

Beverages

Hot Cocoa

We ALWAYS have this premade and around the house! Very good and even better when you add some Bailey's or Kahlua!

Canning Recipes

Schnake Apple Butter

15 or so medium sized tart apples ( I use cortlands or macs)
4 cups of apple juice or cider
2 tsp ground cinnamon
3/4 tsp ground allspice
1/4 tsp ground cloves
2 cups brown sugar

Wash, core, peel & quarter apples. Place apples in a large pot with juice. Bring to a boil then cover the mixture and let simmer for 30 minutes, be sure to stir occasionally. Mash apples in juice and then measure out 10 cups. Add remaining ingredients to the 10 cups. Bring to a boil and reduce heat again. leave uncovered and over ver low heat for 1.5 hours until mixture is very thick. Stir frequently.

Spoon apple butter into hot sterilized canning jars. Leave 1/4 inch head space. Wipe rims and adjust lids. Place in boiling water canner for 5 miutes (half pints) or 10 minutes (pints). The result is 4 pints.

Apple Jelly

Save your cores and peels from making apple butter, apple sauce, and apple pie in a jar to make this yummy jelly! And to spice it up a little--I add a few tsp of cinnamon with the sugar.

Apple Pie in a Jar
This is ingenious! So easy to make--and then if you ever need to put together a quick dessert, plop this bad boy in a pie crust, bake, and you are set!

28 cups peeled apples, sliced
1/4 tsp nutmeg
4 1/2 cups sugar
1 tsp salt
1 cup corn starch
10 cups water
2 tsp cinnamon
3 TBSP lemon juice

Pack apples tightly in quart jars. Make syrup using the remaining ingredients except lemon juice. Cook and stir until thick and bubbly. Add lemon juice. Add syrup to the jars using a spatula to get out all air bubbles. Seal and process jars in water bath for 20 minutes. Makes 7 quarts of filling.  I have had problems with this one overflowing when canning--I recently tried the one below and it was much more successful!

My Mother's Easy Apple Crisp

Heat oven to 375 degrees.

In a 9 x 13 pan place
6 cups peeled & sliced apples (I just cut apples until I fill the pan)
sprinkle the top with 2 TBSP lemon juice

In a separate bowl, mix
1 1/2 cup brown sugar
1 cup flour
1 cup oats
2 tsp cinnamon

Cut 1 cup margerine or butter into flour mixture.

Sprinkle topping on your apples.

Cook in the oven for 45 minutes! Serve with ice cream & caramel sauce!

Peg’s Old Fashioned Bread Pudding
( I honestly haven't tried this one either--but it's my Grandma's recipe so it has GOT to be good!)

1 tall can evaporated milk
1-2/3 cups water
2 eggs, slightly beaten
½ cup sugar
½ tsp. salt
½ tsp. nutmeg
1 tsp. Vanilla
3 slices bread, buttered and cut into 1” square cubes with crust removed
½ cup raisins

Scald milk and water together. Mix eggs, sugar, salt, nutmeg and vanilla. Add hot milk mixture. Place half of bread in bottom of buttered casserole. Add half the raisins. Add remaining bread, raisins and egg mixture. Press cubes lightly into the liquid. Place dish in pan of hot water. Bake in 375 degree oven until custard sets and an inserted knife comes out clean – approximately 45 minutes. To serve, cut in squares and serve with Dip Rosie Sauce (follows)

Dip Rosie Sauce

Mix 1-1/2 Tbsp. cornstarch and ½ cup sugar. Slowly add, while stirring, 1 cup boiling water. Add 1 Tbsp. butter and 1 (or more) tsp. lemon juice, lemon flavoring (or any other flavoring.) Cook over low heat until thick and transparent. If serving bread pudding warm, use warm sauce. If serving bread pudding cooled, serve with cooled sauce. (Grandma prefers it cooled.)

Hot Fudge Sundae Cake

I honestly haven't tried this one yet--another Grandma Irvin recipe.


1 cup flour
¾ cup sugar
2 Tbsp. cocoa
2 tsp. baking powder
¼ tsp. salt


In ungreased 9” x 9” baking pan, stir together first 5 ingredients.


½ cup milk
1 Tbsp. oil
1 tsp. vanilla


Stir in milk, oil and vanilla 1 cup chopped nuts Stir in nuts and spread evenly in pan. Sprinkle with:

1 cup packed brown sugar
¼ cup cocoa


Pour 1-3/4 cup very hot tap water over batter. Bake at 350 degrees for 40 minutes. Spoon sauce from pan over servings or top with ice cream and spoon sauce over top. Good served warm or cold. Very rich and good!


Mini Black-Bottom Cupcakes



These are from Aunt Sally. These are a pain to make, but they are so good and people ask for them every year.


Heat oven to 350 degrees. In medium bowl, combine

16 oz. cream cheese,
2 beaten eggs,
¼ tsp. salt.

Beat well and mix in 12 oz. semi-sweet chocolate chips. Set aside. In large bowl, sift together
3 cups flour,
½ cup unsweetened cocoa,
2 cups sugar,
2 tsp. baking soda,
1 tsp. salt.


Then add to this mixture

2 cups water,
2/3 cup of oil,
2 Tbsp. white vinegar,
2 tsp. vanilla.


Mix well. Using miniature muffin tins and paper liners, fill ½ full of chocolate mixture (about 1 Tbsp.) – then drop 1 tsp. of cream cheese mixture in center. Bake 20 – 23 minutes. Makes 100 -110 mini cupcakes.

Beef, Rice, & Cheese Casserole

This recipe is simple to make, the kids like it, and it freeezes GREAT!  I double the recipe and use 1/2 ground turkey and 1/2 ground beef.  We then eat half for dinner and freeze the rest!

Cheese Sausage Spinach Pie

1 lb italian sausage (bulk)
5 eggs
20 ozs spinach (2 packages frozen chopped, thawed and squeezed dry)
4 cups (16oz) shredded mozzarella cheese
2/3 cup ricotta cheese
1/2 tsp salt
1/8 tsp garlic powder
1/8 tsp pepper
1 pastry (10 inch, double crust pie)
1 tbsp water

In a skillet, cook sausage over medium heat until no longer pink; drain. Separate one egg and set the yolk aside. In a mixing bowl, beat the egg white and remaining eggs. Add spinach, mozzarella cheese, ricotta cheese, salt, garlic powder, pepper and sausage; mix well.


2 Line a 10-in. pie plate with bottom pastry. Add filling. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in pastry.

3 Bake at 375 degrees F for 50-60 minutes or until crust is golden brown and filling is bubbly. Let stand for 10 minutes before cutting.

Creamy Zucchini Casserole

Rob really liked this as a freezer casserole. I used plain yogurt instead of sour cream for a healthier yet tasty alternative.

Ground Beef Hash

Simple and yummy!

1 pound ground beef
1 pound sausage
4 carrots sliced
1 large onion diced
4 potatoes cubed
2 (10 oz) can of cream of mushroom soup
4 cloves garlic minced
salt & pepper to taste

Brown meats together.  Combine all ingredients.  Put in 9x13.  (This is a pretty big recipe--I usually do 1 9x13 and then freeze an 8x8 for a future meal.  Cover with foil.  Cook 1 hour at 350. 
Mexicali Hamburger Casserole

This is a yummy one.  Very quick & good.  I don't make the tomato toss--but perhaps in the summer I will with fresh ones from the garden. Mmmmm...

Pumpkin Black Bean Bake

This is great for the fall!

1 lb ground beef
2 cups cubed pumpkin pieces
1 coarsely chopped medium onion
1 15 oz can black beans--rinsed
1 cup corn
1/2 tsp salt
1/2 cup beef broth
3 oz cream cheese
1 8.5 oz package of corn bread mix
1 egg lightly beaten
1/3 cup milk
1/3 cup pureed pumpkin

Preheat oven to 400 F. Cook ground beef, pumpkin, and onion over medium heat until browned. Drain juices. Stir in black beans, corn and salt. Heat through. Stir in broth and cream cheese until blended. Transfer into 9 x 13 baking dish. In medium bowl stir corn bread mix, egg, milk, and pureed pumpkin until just combined. Spoon over beef mixture. Bake 20 minutes or until toothpick comes out clean.


Santa Fe Casserole

Great Casserole for the freezer. I nix the taco sauce and use extra salsa. I also add corn. I also nix the sour cream.

Chicken & Tortilla Soup

This is my mom’s recipe. It is a great soup base that I love to play with (no two batches are ever the same!) For a variation, you can also add cooked rice.

1 chopped large onion
6 minced cloves of garlic
1 chicken breast chopped
4 tsp cumin
½ tsp of cayenne pepper
49 oz chicken broth
15 oz diced tomatoes
8 oz tomato sauce

grated cheddar cheese
diced green onions
sour cream
tortilla chips

Saute onion & garlic in olive oil. Add chicken. Cook until browned. Stir in cumin and pepper. Cook 1 minute. Add broth, tomatoes, and sauce. Bring to boil. Reduce heat and simmer 20 minutes.

Top with remaining ingredients & serve with chips!

Chunky Bean & Chicken Chili
This recipe is a little bland--but I LIKE IT! We had just gotten done with a lot of sick tummies and this recipe really hit the spot! It is a great cold weather dish. Be sure to make the chips and cheese to go with it.

Corn Chowder


This is by far the best corn chowder I have ever made. LIke all recipes though, next time I will make a few adjustments. For example, less sugar--maybe just a tablespoon? I also used 2 cans of corn and 1 can creamed corn. You could also throw some additional veggies in. I think I would also try sausage or ham as the meat as well. Enjoy!



4 ounces bacon sliced into 1 inch pieces

2 tablespoons olive oil or butter

2 cups chopped onions

3 ribs celery chopped (1 cup)

2 TBSP flour

2 cups chicken stock

2 cups milk

2 large potatoes diced

4 cups of corn

2 TBSP sugar

1 cup half and half

salt and pepper to taste

1 red pepper chopped



In large stock pot cook bacon for 5 minutes over med-high heat.until almost crispy. Reduce heat to med-low and add butter/oil, onions, and celery. cook stirring occasionally for 10 minutes. Sprinkle with flour.and cook stirring for another 3 minutes. add stock, milk and potatoes. Bring to a simmer over med-high heat, then reduce heat to med-low and cook until potatoes are just tender 12 minutes. Lightly mash in the pot with potato masher. Stir in corn and sugar, half and half, and salt and pepper to taste. Bring back to a simmer over med heat and add red peppers. Garnish with cilantro.
Ann's Ham-Apple-Cheddar Quesadillas

I got this from my friend Ann. These are very yummy and so easy to make! A perfect side to a bowl of soup!

5 (10-inch) burrito-size flour tortillas (I use whole wheat tortillas)
1 tablespoon Dijon mustard
2 1/2 cups (10 ounces) shredded sharp Cheddar cheese
1 lb thinly sliced deli ham
2 Granny Smith apples, thinly sliced

Spread half of each tortilla with mustard. Sprinkle 1/2 cup cheese over mustard on each tortilla. Top with ham and apple slices. Fold tortillas in half over filling. Heat a lightly greased griddle or large nonstick skillet over medium-high heat just until hot. Cook quesadillas, in batches, 2 minutes on each side or until cheese melts and outside browns. Remove from heat, and cut into wedges. Serve with fig preserves for dipping, if you want to be all fancy about it.

Minestrone Soup


This is a nice quick and yummy Minestrone recipe
(Prep Time: 15 minutes. Cooking Time: 30 minutes)

1 Tablespoon olive oil

1 onion, diced

3 garlic cloves, minced

1 large carrot, diced

2 stalks celery, diced

2 (15 oz) cans Italian style petite diced tomatoes

1 (15 oz) can cannellini beans, drained

1 (15 oz) can kidney beans, drained

1 (32 oz) box chicken broth

1 small zucchini, diced

1 Tablespoon basil or oregano

1 ½ cups small dried pasta such as small shells

Parmesan cheese

1. In a large stock pot, sauté onion, garlic, carrots and celery in olive oil for a few minutes.

2. Add remaining ingredients, except for pasta. Bring to a low boil and then reduce heat. Allow soup to simmer for at least 30 minutes .

3. Prior to serving, cook pasta as directed

4. To serve, place a ¼ cup of cooked pasta in each bowl and top with soup. Sprinkle Parmesan cheese on top as desired.

Breads

Angela's Oven Apple Pancake

Yummy goodness!  You could probably use other things besides apples like pears, peaches, bananas,etc...

1 Cup flour
2 tsps. Sugar
dash salt
6 eggs
1 cup milk
3-4 large apples peeled, cored, sliced thin
cinnamon and sugar mixture
butter (to cook the apples)
Mix together flour, sugar, salt, eggs and milk. Set aside. Fry apples in butter in a large pan to desired tenderness. Transfer apples to a 9X13 pan sprayed with non-stick. Pour batter over the apples and place in 500 degree oven. Pancake will rise when nearly done, abt. 10-12 min. Reove from oven and sprinkle liberally with cinnamon sugar mix. Dot with butter and return to oven until browned, 3-5 minutes. Cut into squares.

Banana Pancakes

This recipe is the basis for pretty much all our pancakes. We may add peanut butter (melted in the microwave) or add chocolate chips/ berries or additional spices like nutmeg or allspice. Also--the more over-ripe the bananas, the yummier the pancakes!

1 1/4 C. flour
1 Tbsp. granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
1 1/4 C. milk
1 banana mashed
1 large egg, lightly beaten
1 tsp. vanilla extract

Combine dry ingredients in a large bowl. Stir in remaining ingredients. And VOILA! Do your pancake thing! Cook on a greased skillet (on medium heat) for about 2 minutes, and flip. Cook another 2 minutes. (When the top of your pancakes are bubbly--that is when you know to flip!)

Cheddar & Chives Popovers

1 cup flour
1/2 tsp salt
1 cup milk
2 eggs
1 cup shredded cheese
2 tbsp chopped chives

Coat 8 cups of muffinpan with nonstick cooking spray. Fill remaining cups with 1/2" of water to ensure even cooking. Preheat oven to 450. Mix together flour and salt in one bowl. Mix together milk and eggs in another bowl. Combine flour and egg mixture. Fold in chives and cheese. Fill muffin pan. Cook for 15 minutes then reduce oven temperature to 350. Cook for an additional 15 minutes. Enjoy!

Duggar Homemade Rolls (Giant Crescent Rolls)

This recipe is FABULOUS!  So YUMMY!  Definite winner and so easy to make.  You may want to halve the recipe, or make them all and freeze half--makes 16 rolls.

1/2 cup shortening


1/2 cup sugar

1 teaspoon salt

2 packages yeast

5 cups flour, plus flour for kneading

2 eggs

2 cups hot water

1/2 cup (1 stick) butter, melted

1.Combine the shortening, sugar, salt, yeast, and 2 cups of the flour in a large bowl and cut with a pastry cutter.


2.Beat 2 eggs in a 2-cup measuring cup, then fill cup to the 2-cup mark with hot water; pour over the dry mixture. Slowly add the remaining 3 cups flour.

3.Cover bowl loosely with plastic wrap and let rise for 20 minutes in a warm oven. Then pour the dough onto a floured surface. Knead. Flatten with hands into a large pizza shape.

4.Cut with pizza cutter into 16 triangle-shaped slices. Roll up from the wide end to the point. Place the rolls in two greased 9x13-inch pans, bending into crescent shapes and leaving space for the rolls to double in size.

5.Let rise in a warm (but not hot!) oven at least 20 minutes. Remove from oven.

6.Preheat oven to 375°F. Bake the rolls for 20 to 30 minutes, depending on how brown you prefer. When done, immediately brush with the melted butter.

GingerBread Waffles

These are pretty tastey!  Next time I make it I think I will add a little less sugar or molasses next time, they are pretty sweet!


■1 cup unbleached, all purpose flour

■1 cup whole wheat flour
■3 t. baking powder

■2 t. ground ginger

■2 t. cinnamon

■1/2 t. nutmeg

■1/2 t. sea salt

■3 eggs

■1/4 cup brown sugar
■1 3/4 cups buttermilk
■1/2 cup melted butter

■1/2 cup unsulphured, blackstrap molasses

In a big bowl, mix together the flours, baking powder, ginger, cinnamon, nutmeg, and salt.

In a separate bowl, beat the eggs and sugar together, then mix in the buttermilk and molasses.

Combine the 2 bowls and pour around 1/2 cup of the mixture into your preheated waffle maker.

Cook according to your waffle maker’s directions.

Serve these with lots of real butter, real maple syrup, fresh fruit, yogurt, or even applesauce!





Healthy Low-Fat Banana Zuchini Bread


This is the best recipe I have found for Zuchinni bread. It takes out a lot of the sugar and fat and still tastes yummy! I nix the raisins and sprinkle some chocolate chips on top!

Irish Brown Bread

Quick, healthy, and yummy!

1 1/2 cups white flour
1 1/2 cups whole wheat flour
1/2 cup wheat germ
1/2 cup quick oats
1 1/2 tsp baking soda
3/4 tsp salt
1 3/4 cup buttermilk (I use yogurt instead)
2 Tbsp honey

Heat oven to 425. Mix dry ingredients and wet ingredients separately. Then combine. Turn dough onto floured surface and shape into a circle about 2-3 inches high. Place on greased baking sheet and bake for 15 minutes. Reduce temp to 400 and bake 15 minutes more or until the bread sounds hollow when you tap it. Let cool 20 minutes.

Jantina's Banana Bread

This is my friend Jantina's Banana Bread Recipe--when she brings this--YUM! I don't think I have tasted banana bread better than this.

3 bananas mashed
1 egg
1/3 cup canola oil
1 tsp vanilla
1 1/2 cups flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1/2 cup chopped nuts (optional)

Combine bananas, egg, oil, vanilla, and sugar. In another bowl, combine flour, soda, and salt. Mix combinations together; add nuts if desired. Spoon into prepared muffin tin. Bake at 350 degrees F for 18-22 minutes. Makes 12 muffins.

Miracle Rolls

This recipe is from the Laura Ingalls Cookbook.  It makes 32 yummy dinner rolls.  You can make the dough now and refrigerate then bake later.  I divide the dough in 2 parts and make 16 one night and 16 a couple nights later.  I am also betting you could freeze the dough (though I haven't tried yet.)

2 cups boiling water
1 TBSP salt
1/3 cup granulated sugar, plus 1 tsp later
1/3 cup lard (I have also used shortening or butter)
2 packages of yeast
1/4 cup warm water
2 eggs
8 cups of flour

Combine boiling water, salt, 1/3 cup sugar, and lard.  Stir until dissovled then let cool to luke warm. 

Dissolve yeast in warm water with remaining 1 tsp sugar.  Let stand.

When sugar mixture has cooled, add eggs, yeast mixture, and 4 cups of flour.  Beat well.  Mix in remaining flour 1 cup at a time.  Refrigerate dough in plastic bag or tightly covered container.  You can keep this dough for several days before using it. 

When ready to use, preheat oven to 350 degrees.  Remove dough from fridge and divide in half.  Form each half into 16 rolls.  Place on greased cookie sheet.  Cover with towel and let rise until doubled in size (about 1 hour).  Bake for 15 minutes or until light brown.
Pizza Crust

This is a good recipe for pizza crust.  I double mine and do it in the breadmaker.  Then freeze half for making a pizza next time!

Raspberry Oatmeal Banana Bread

This one I did a lot of work on to perfect. Very yummy & healthy if you have raspberries in the summer!

3 cups all-purpose flour
1 cup of oatmeal
1 cup sugar
4 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
¾ tsp nutmeg
4 large ripe or overripe bananas, mashed
2/3 cup skim milk
2 large egg
2 tsp pure vanilla extract
3 cup fresh or frozen raspberries

Heat oven to 350°F. Coat two 8" loaf pan with cooking spray. In a bowl, combine flour, sugar, baking powder, baking soda, oatmeal, cinnamon, nutmeg, and salt. In a separate bowl, combine bananas, milk, egg, and vanilla; fold in raspberries. Fold together wet & dry ingredients until combined. Do not overmix. Pour batter into pans; bake 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan; cool completely.

Peanut Butter Pumpkin Bread

I was given this recipe from a friend. YUMMMY!

3 C. Sugar
1 (15oz pumpkin)
4 eggs
1C. Veg. Oil
3/4 C water
2/3 C. Peanut butter
3 1/2 C flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp ground nutmeg

Combine sugar, pumpkin, eggs, oil, water, and peanut butter; beat well. Combine flour, baking soda, salt, cinnamon, and nutmeg; mix well. Pour in 2 ungreased 9inx5x3 loaf pans. Bake 350 for 60-70 min or until tooth pick center comes out clean.

Pumpkin Bread

This pumpkin bread is very easy and everyone in our family loves it. Sometime I put chocolate chips in it – or dried cranberries. It’s a must at Thanksgiving and Christmas! Lisa likes to spread butter on it – I prefer whipped cream cheese – or just plain is also very good!


3 cups all-purpose flour
2 cups sugar
2 tsp. baking soda
1 tsp. ground cloves
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1 tsp. salt
½ tsp. double-acting baking powder
1 – 16 oz. can pumpkin (2 cups)
2/3 cup salad oil
3 eggs, slightly beaten


Preheat oven to 350 degrees. Grease well two 9” x 5” loaf pans. In large bowl with fork, mix flour with next 7 ingredients; add remaining ingredients and mix just until blended. Turn batter into pans. Bake about 1 hour or until toothpick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans and cool completely. Makes 2 loaves.

Pumpkin Buns

These came out of a Family Circle magazine.  This is a double batch--so you can make a batch and freeze the other batch for another morning!

Pumpkin Buns


1 envelope active dry yeast(about 2 1/2 tsp)

1/4 cup warm water

1 tsp plus 2 tablespoon granulated sugar

2 eggs

1/4 cup(1/2 stick) butter

1 can (15 oz) solid pack pumpkin

5 1/2 cup all-purpose flour

3/4 tsp salt

Filling:

1/2 cup(1 stick) unsalted butter, softened

1/4 cup granulated sugar

1 cup packed light brown sugar

1 tablespoon cinnamon

Frosting:

1 package cream cheese, softened
1/4 cup butter softened
1 1/2 cup confectioner's sugar
1/2 tsp vanilla extract
1/8 tsp salt
Sprinkle yeast over warm water in large bowl. Add 1 teaspoon of the granulated sugar; let stand until foamy, about 5 minutes. Beat in remaining 2 tablespoons sugar, the eggs, butter and pumpkin.

Gradually add 5 cups of the flour and the salt, scraping side of bowl, until soft dough forms. Turn out onto floured surface and knead remaining 1/2 cup flour into dough, adding more if sticky. Knead for 10 minutes, until smooth. Dough will be soft.

Grease a bowl; add dough. Cover with plastic wrap and place in a warm spot until doubled, about 1 1/4 hours.

Coat two 13x9x2 inch baking pans with nonstick cooking spray.

Make Filling:

Mix butter, granulated and brown sugars, and cinnamon in a bowl.

Punch down dough. Roll out half onto a lightly floured surface to form a 16x10 inch rectangle. Spread with half the filling. Starting on one long side, roll up jelly-roll fashion. Pinch seam to close. Repeat with second half of dough and filling.

Cut each log crosswise into 12 generous 1 inch pieces. Arrange 12 pieces, cut-side down, in each prepared pan. Cover with plastic wrap; let sit in a warm spot until buns double in size, about 30-45 minutes. (You can refrigerate one pan overnight or cover plastic with foil and freeze at this point.  Thaw in fridge overnight, then thaw on counter while preheating oven.)

Heat oven to 350. Uncover pans and bake buns until they are golden brown and bubbly, 28-33 minutes (thawed buns 36 minutes).

While baking beat together frosting ingredients.  Spread frosting on warm buns before serving.


Pumpkin Muffins

This recipe I got from a friend.  I use some substitutions to make it a bit healthier, but keep it yummy.  I use 3/4 cup of applesauce and 1/2 cup of oil instead of 1 1/4 cup oil.  Also--since applesauce is a good sweetener, I reduce the sugar to 1 1/4 cup.  Otherwise-YUMMY!  Enjoy!

Raisin Tea Ring

This recipe came from my Laura Ingalls Wilder phase.  This is one of her true recipes.  There isn't a lot of sugar in this--but there is LOTS of butter.  It makes a nice breakfast bread.

3cups flour
7 TBSP sugar
4 tsp baking powder
1 tsp salt
3/4 cup butter
1 cup raisins
1 egg
3/4 cup milk
1/2 cup chopped walnuts or pecans

Preaheat oven to 425.  Grease cookie sheet.  Mix flour, 6 TBSP of sugar, baking powder and salt together.  Use a pastry blender and cut in butter until mixture forms tiny balls.  Mix in raisins.  Mix egg and milk and stir into flour mixture.  If necessary, add additional milk to make dought soft.  Turn dough onto cookie sheet and shape into long roll about 1 1/2 inches thick.  Twist roll into a ring.  Sprinkle with remaining TBSP of sugar and press in nuts.  Let rest for 20 minutes.  Bake for 20 - 25 minutes until firm and browned.
Simple Scone Recipe

Okay..this recipe is SOOOO GOOOOD!  The dough tastes like cookie dough. The nice thing is--there isn't much sugar.  The bad thing--SO much butter!  I used yogurt b/c I didn't have sour cream and it was just as good.  (Oh..and of course I used chocolate chips instead of raisins! :) )

Soft Pretzels

LOVE LOVE LOVE this recipe!  Top with salt, cheese, cinnamon sugar, you pick!

4 teaspoons active dry yeast


1 teaspoon white sugar

1 1/4 cups warm water (110 degrees F/45 degrees C)

5 cups all-purpose flour

1/2 cup white sugar

1 1/2 teaspoons salt

1 tablespoon vegetable oil



2 TBSP baking soda

5 cups hot water

1/4 cup kosher salt, for topping

Directions

1.In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes.

2.In a large bowl, mix together flour, 1/2 cup sugar, and salt. Make a well in the center; add the oil and yeast mixture. Mix and form into a dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 hour.

3.Preheat oven to 450 degrees F (230 degrees C). In a large bowl, dissolve baking soda in hot water.

4.When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Simmer 5 cups of water with 2 TBSP of baking soda in a medium sized skillet.  Place each pretzel into the baking soda solution for 30 seconds (flip if necessary and do another 30 seconds) and place on a greased baking sheet. Sprinkle with kosher salt.

5.Bake in preheated oven for 8 minutes, until browned.



Stardust Chocolate Pancakes

Rob made these after we were unable to get into a restaurant that is famous for Oreo pancakes (kids can't wait an hour to eat.) These were very yummy! Rob made them with freshly picked Bing cherries. SO GOOD! (Warning--not so healthy!!!!)

Twisted Berry Nut Bread

With our raspberry bushes and our jam making, I found this recipe.  It is a beautiful bread and great for breakfast or a snack.  YUM!

3/4 cup milk


1/3 cup sugar

3 tbs butter

1/2 tsp salt

1 packet active dry yeast

1/4 cup warm water (105-115 degrees)

3 eggs

4 1/4 cups flour, plus more for dusting

3/4 cup seedless raspberry jam

3/4 cup chopped walnuts, toasted

1 tbsp sugar

Heat milk, sugar, butter and salt in small pan until butter melts. Let cool 30 minutes. Sprinkle yeast over warm water in large bowl; stir to dissolve. Add milk mixture, 2 eggs and 1 1/4 cups flour. Beat 3 minutes on med-low until smooth. Stir in about 3 cups of flour.


Turn dough out onto floured surface. Knead until smooth and elastic, 3-5 minutes, adding flour as needed to prevent sticking. Place in large oiled bowl, turning dough to coat. Cover with plastic wrap and let rise in warm place until doubled, 1 hour. Punch down; place on floured surface. Cover; let rest 15 minutes.

Lightly coat 15 x 10 x 1 baking sheet.

Filling. Roll dough into 14: square. Brush with jam, leaving 1" border. Sprinkle with nuts. Roll dough jelly-roll style. Pinch seam. Transfer to prepared baking sheet. Cur roll in half; cross strips over to braid. Cover with wrap and let rise until doubled, 30 - 45 minutes.

Brush with egg wash; sprinkle with sugar. Bake at 350 for 30 minutes until brown and sounding hollow.


Whole Wheat Bread

This I got from a Laura Ingalls Wilder Cookbook.  It is a sweeter bread and OH so YUMMY!  Only make it, if you have cream cheese on hand to spread on top of it!

1/2 cup brown sugar
1/2 cup molasses
1 egg
3/4 tsp baking soda dissolved in 2 TBSP hot water
1 cup milk
1 1/2 cup whole wheat flour
1 1/2 cup all purpose flour
2 tsp baking powder
1 tsp salt
1 cup walnuts
1 cup raisins

Preheat oven to 350.  Grease 2 loaf pans.  Add molasses to brown sugar and let it seep in.  Add egg, dissolved baking soda, and milk.  Stir well.  Combine dry ingredients.  Beat dry ingredients in wet.  Stir in walnuts and raisins.  Divide between pans and bake for about 40 minutes.  (Don't forget to smother with cream cheese when eating!)


Whole Wheat Cinnamon Raisin Walnut Bread

This is a breadmaker recipe I got from my mother.  YUMMY!

For a 2 lb. loaf.

3 egg whites at room temperature + enough water to = 1 1/2 cups
1/4 cup oil
1/4 cup honey
2 tsp salt
1 1/4 tsp cinnamon
4 cups whole wheat flour
2/3 cup chopped walnuts
2 1/4 tsp yeat

2/3 cup raisin added after first rise.

This is a yummy one if you have a head of cabbage. We altered this by omitting the butter and just toasting the noodles & nuts in the oven. We also reduced the oil to 1/2 cup and the sugar to 1/4 cup.

Cookies & Candies

Almond Fudge Truffles(Another Grandma Irvin recipe I haven't tried)

½ cup cocoa
1 cup sifted confectioner’s sugar
½ cup softened cream cheese
½ tsp. almond extract

Combine and mix until smooth in food processor, blender or use electric mixer.
Drop by rounded tsp. in 2 tsp. cocoa powder. Roll in balls until covered with cocoa powder. Refrigerate until firm – 1 to 2 hours. Put in foil candy cups. Makes 24 truffles.

Apple Cookies
I got this recipe from my friend Teri--a great fall cookie for after all that apple picking!

1 C. brown sugar
1 1/2 sticks of butter
1 egg
1/3 C. strong coffee
1 t. cinnamon
1 t. soda
2 C. flour
1 C. Dice apples
1 C. raisens

Frosting:
3 C. powdered sugar
1/4 C. butter
1 t. vanilla
1/4 C. strong coffee

Cookie: Mix and drop dough balls on cookie sheet. Bake for 350 degree for 10 minLet cookies cool then add frostingFrosting: mix together powdered sugar, butter, and vanialla, then add the coffee.

Candy Cane Cookies
Grandma Irvin made these every Christmas! A fun christmas sugar type cookie!

Mix thoroughly: 1 cup shortening (1/2 butter) 1 cup sifted confectioners sugar 1 egg 1-1/2 tsp. almond extract 1 tsp vanilla Sift together and stir in: 2-1/2 cups flour 1 tsp. salt Divide dough into halves. Blend into one half of the dough ½ tsp. red food coloring. Roll 1 tsp. of each color dough into a strip 4 inches long. Place strips side by side, press lightly together and twist like a rope. Place on ungreased cookie sheet – shape like a candy cane. Bake about 9 minutes until lightly browned. Remove while warm and sprinkle with ½ cup crushed peppermint candy and ½ cup sugar.




Candied Orange Peel
Another G'ma Irvin recipe. I have not tried this or the grapefruit peel--I guess these would be a good way of not wasting ANY of your fruit!
Quarter and remove peel from 6 oranges. Place in pan with 2 tsp. salt and cover with water. Boil for 30 minutes, drain, discard water. Repeat 2 – 3 times. Cut peel in narrow strips. Make syrup of 2 cups sugar and 1 cup water. Add orange peel and boil gently until syrup is practically all absorbed. Drain (if necessary) and roll in granulated sugar to thoroughly cover and coat. Spread on waxed paper to dry, turning over several times.
Candied Grapefruit Peel
Remove peel from 2 grapefruit in wide strips. Place in pan with 2 tsp. salt and cover with water. Boil for 15 minutes, discard water. Repeat 4 or 5 times. Cut peel in narrow strips. Make syrup of ½ cup light corn syrup, 1 cup sugar and 1 cup water. Boil peel gently until most of the syrup is absorbed – around 40 minutes. Drain, roll in granulated sugar and lay on waxed paper to dry, turning over several times - 48 hours.

Chai Spice Cookies
This was too good! A much better alternative than the traditional gingerbread men cookies!

Chocolate Nut CookiesAnother Grandma Irvin recipe

Combine:2 c. brown sugar3/4 c. shortening (can be part margarine) Add:2 eggs and beat mixture Combine:4 c. flour½ tsp. salt1 tsp. soda½ tsp. baking powder¾ cup cocoa – (or 4 oz. melted chocolate) Add to first mixture alternately with:1 c. milk1 tsp. vanillaBeat well Add:1 c. chopped nuts Drop by tsp. on lightly greased cookie sheet. Bake at 350 degrees for 12 – 15 minutes.


Cowboy CookiesThis is a Grandma Irvin recipe. One I remember growing up with. A very Hearty cookie!

2 c. flour
1 tsp. soda
½ tsp. salt
½ tsp. baking powder
Combine and blend together dry ingredients

In large bowl blend:
1 c. shortening (I use butter/margerine)
1 c. granulated sugar
1 c. brown sugar

Then add:
2 eggs

Beat until light & fluffy. Add flour mixture and mix well.

Then add:
2 c. rolled oats (Grandma doesn’t use instant oats, but Aunt Sally does – it makes cookies 1 pkg. semi-sweet chocolate chips a little less dense)
1 tsp. vanilla

Dough is crumbly. Drop by tsp. on greased cookie sheet. Bake at 350 degrees for 15 minutes.


Date-filled Oatmeal CookiesGrandma Irvin made these cookies every Christmas. They are like little pies! These were my favorite!

Cream 1 cup shortening and 1 cup white or brown sugar.

Sift 2-1/2 cups flour with ½ tsp. baking powder and ½ tsp. salt. Add 2-1/2 cups rolled oats.

Add alternately with ½ cup water to first mixture and blend well.

Make date/nut filling by combining ½ cup sugar, ¼ cup water, 2 cups chopped dates and ½ cup chopped nuts. Cook till thickened and well blended – stir constantly and cool before filling cookies.

Roll dough to ¼” thickness. Cut in rounds. Place 1 tsp. filling on each cookie and cover with another round. Press edges together with tines of a fork and bake at 350 degrees for 10 to 12 minutes



Death by Chocolate Cookies
These cookies are a little pricey to buy all the chocolate – but they are so yummy, especially if you’re a choco-holic! 2 pkg. (16 squares) Bakers semi-sweet baking chocolate ¼ cup firmly packed brown sugar ¼ cup butter or margarine 2 eggs 1 tsp. vanilla ½ cup flour ¼ tsp. baking powder 2 cups chopped nuts (optional) Heat oven to 350 degrees. Coarsely chop 8 squares (1 pkg.) of chocolate pieces; set aside. Microwave remaining 8 squares chocolate in large microwaveable bowl on high 1-2 minutes. Stir until chocolate is melted and smooth. Stir in sugar, butter, eggs and vanilla. Stir in flour and baking powder. Stir in reserved chopped chocolate and nuts. Drop by ¼ cupfuls onto ungreased cookie sheet. Bake 12 to 13 minutes or until cookies are puffed and feel set to the touch. Cool on cookie sheet 1 minute. Transfer to wire rack to cool completely. Makes about 1-1/2 dozen cookies.

Fudgie Scotch Ring (or decorated Fudgie Christmas wreath)

I honestly don't remember this one--but it's fudge! You can't go wrong!1 – 6 oz. pkg. chocolate chips 1 – 6 oz. pkg. butterscotch chips 1 can Borden’s sweetened condensed milk Melt together in double boiler over hot (not boiling) water. Stir occasionally until it thickens. Remove from heat. Add: 1 cup coarsely chopped walnuts ½ tsp. vanilla Blend well. Chill for at least an hour until mixture is thick. Line bottom of 9” pie tin with 12” square of foil. Spoon chocolate mixture in mounds to form ring. Decorate as desired. Chill and slice to serve.

Melting Moments
Another Grandma Irvin recipe.
Mix 1 cup butter or margarine with ½ cup confectioner’s sugar. Beat until light and fluffy.

Add 1-1/4 cups unsifted flour and ¾ cup cornstarch. Mix well, cover and refrigerate at least 2 hours.

Make into 1 inch balls. Bake at 350 degrees for 10 minutes. Cool

Glaze: Mix. 1-1/2 cups confectioner’s sugar, 3 tbsp. orange juice and grated orange rind. Swirl top of cooled cookie in glaze and let dry (better to frost with a knife.)

Oatmeal Bars

These are YUMMY!  Very rich!  I like to put in peanut butter chips and chocolate chips! 

1 c. all-purpose flour

1 1/4 tsp baking powder
1/4 tsp salt
1 c. brown sugar
3/4 c. (1 1/2 sticks) unsalted butter, softened
1 tsp vanilla extract
1/4 c milk
2 c quick oats
1 1/4 c semisweet chocolate chips

Heat oven to 375. Coat a 8x8x2 baking pan with nonstick cooking spray, set aside.

in a small bowl, whisk flour, baking powder & salt together. In a large bowl, beat sugar & butter on medium-high speed until fluffy. beat in vanilla. Reduce speed to low and beat in milk, then flour mixture. stir in oats & 1 c. of chips.

Spread batter into prepared pan. bake for 35 min. or until wooden pick comes out clean. cool completely on a wire rack. microwave remaining chips for 30 seconds; stir until smooth & drizzle over bars. cut into 16 squares.

Peppermint Patsies

Move over peppermint patties--we have a new HOMEMADE patty in town!  This is my FAVORITE christmas cookie!

1 lb confectioners sugar
3 TBSP unsalted butter, softened
1 TBSP peppermint extract
1/2 tsp vanilla
1/4 tsp salt
1/4 cup evaporated milk
2 cups semisweet choc chips
2 TBSP vegetable shortening

Put wax paper on cookie sheets. In a large bowl mix at medium speed- butter, sugar, extract, vanilla and salt until combined.  Then add milk and mix well

Roll the dough into 1 inch balls and place on cookie sheets.  Refrigerate 20 minutes.  Use a clean glass with a flat bottom and flatten each ball to 1/4
 thickness.  Refrigerate 30 minutes longer then freeze for 10 minutes

In a double boiler, melt the chocolate and shortening.  Stir until smooth.  Let cool for 10  minutes.  Thendip the patsies into the chocolate, turning to coat.  Place patsies on wax paper and freeze for 5 minutes to harden the cookies.


Secrets aka Bon Bons
This is my Grandma Irvin's original recipe. I make a variation of this recipe-I use1/2 C. margerine, 1 Tbsp of vanilla, 3/4 C powdered sugar (Cream these) then add 1 1/2 C. flour and 1/8 tsp salt until you get desired crumbly consistency. I use Hershey kisses and Marschino cherries for the middle. Bake at 350 for 12 - 15 minutes. Cool then dip tops in melted Choc chips and decorate.

1 cup soft shortening
½ cup sifted confectioners sugar
2 tsp. vanilla
2 cups all-purpose flour
½ tsp. salt
1 cup uncooked quick-rolled oats
36 candied cherries
1 pkg. semi-sweet chocolate pieces
2 Tbsp. milk
Chopped nuts

Sift flour with salt. Mix shortening, sugar and vanilla until creamy. Add flour mixture to shortening mixture and mix well. Stir in oats. Dough will be quite stiff. Shape 1 Tbsp. dough around each cherry. Place 2” apart on ungreased cookie sheet. Bake 25-30 minutes at 325 degrees until done. Cool

Melt chocolate with milk over hot water (or in microwave) – mix until smooth. Using tongs or two forks, dip tops or ends of each cookie into chocolate. Then, if desired, roll in chopped nuts. Drain on wire rack. Makes 36 cookies.

Soft Chocolate Chip Pumpkin Cookies

These are almost too soft to be a cookie...but what a great way to get some extra vegetables into your kids.

1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)

Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well. Add vanilla, chocolate chips and nuts.3. Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.
